lol i got 7 boxes!
my computer is about to lose battery and the cool thing ken got to plug it in to the trucks power won't let t plug in! it needs a 3 prong! ugh when i get home i am getting an adapter!

Hi again. My nap was good---sorry yours was a bust, Lony.

Welcome, Kim. This is a great group of friends. Lots of support and love to share. Jump in and join us. I have 2 boys--a college freshman and a h.s. freshman. I just had weight loss surgery 5 weeks ago and am adjusting to that. I just couldn't take it anymore. I go for my 6 week checkup on Monday and will know how much I've lost then.

Great minds think alike. I have 5 lbs of ground beef to make meatballs and spaghetti for tonight. I can't eat the pasta but will try a meatball.

Ok, soooooooo, I left you all a while back to head to another town next to us to pay my son's traffic violation in person. On the way back I stopped at Aldi to pick up milk (3.11 gal!), bread, garlic (my grocery store had it for 3.99 and it was .89 for 3 bulbs at Aldi), crescent roll dough, blueberries, strawberries, kiwi and to see if they had any other ingredients for the Chicken Provencal I am making for tonight. Surprisingly, I found a large can of crushed tomatoes and a can of tomato paste. I also picked up two pkgs of sugar cookie dough to make little fruit pizza tartlets for snack/dessert for my kiddos (hence the fruit). Still had to head to another grocery store though. Which I did. Finished up there. Came home and started making the Chicken Provencal--3 onions minced and 12 cloves of garlic minced. (You are loving this aren't you Melinda?!) OMG. Anyway went to do that, only had two onions and didn't feel like doing more than 10 cloves of garlic so.... anyhow I went to the fridge to get out my chicken thighs only to find.....get this.......that I didn't have any!!!!! Then I remembered that I had put the chicken thighs back last night when I did my 10:30 grocery run for milk. Drat! Drat! Double Drat!!!!! Sigh.

Had to take oldest to work at 3:00 so I dropped her off and then ran by the grocery store on the way home for chicken thighs, onions, Irish Spring bars for dh. Anywho, as this is a crockpot recipe I guess I am having Chicken Provencal for dinner TOMORROW night!

Yep. That is what I find typically happens when I try to take a nap. So, I rarely take one. We may end up with chili or do it yourself pizza pockets that is what I bought the crescent roll dough for anyway. Maybe I should have gotten biscuit dough instead? Chicken Provencal would be much healthier and much more LC.

Does anyone eat Kale?? On the Food Network the other evening they put it on a sheet pan with a little Olive oil and salt. They sprinkled lemon juice over it after it was done. They talked as if it was good. It turned out crispy looking. Of course I had to buy some today to give it a try. I'll try most anything once!!
Yes, I have made Kale Chips. I like them. Heat up just a small amount and if you don't like it that way then you can cook the rest a different way.

Hi and Welcome. We are all in various stages of losing weight here. Most of us used to do LC but now we do various methods. The ladies here do know recipes and Deb seems to be able to find just about anything. Eliza is a wealth of info, too. we will be happy to support you! If you look at the top of the page there is something that says User Control Panel and if you click on that one of the things it should show you is any threads (like this one) that you have posted on. That way if you forget which one you were in it is there for you and you just click on it. Then it will take you to the thread. Hope that helps.

KCMama I re-read what I wrote and I didn't mean to insult your dessert bar with the list of pre-purchased stuff. I was thinking of a regular food thing. Mona....here in our town they no longer will let you bring in any home made goodies for class parties and such. You have to have "bought" goodies. My oldest daughter still talks about when I was the room mother and the different things I made and brought to the class parties. She recalls the glove hand I made for each of them on Halloween. I took a clear plastic glove and put candy corn in the tips for nails and then added pop corn. They wouldn't let you do that now unless you bought the corn already popped! Some years back when I would go to the ladies monthly luncheon at church we all would bring our best recipes. OMG....some of those older ladies sure knew how to cook!!!! It is going to be a lost art I am afraid in years to come.

Deb is right....we sometimes have some "Food Porn" on here!!! BEWARE! But...we all also have some wonderful LC recipes if you ever need any.


Lony.....Melinda and I wrote each other a few times yesterday. I haven't heard from her today. My guess she is "trying" to get her head on straight like all of us right now. I'll go and see if I can get her to write.

Hi again. Meatballs are done. I ended up only using 2 1/2 pounds cause it was a lot plus I didn't feel like making otns of meatballs. They have been oven baked and are now in my homemade sauce. YUMMMM I hope my tummy will like it.

They made this dish on the noon news show. They claim it is really good.

Spaghetti Squash AuGratin
1 medium spaghetti squash
2 tablespoons light butter

1 small yellow onion, cut in half and very thinly sliced

¼ teaspoon red pepper flakes, or more if you like it spicy

1 teaspoon fresh thyme

½ cup sour cream

½ cup shredded cheddar cheese

1. Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a ¼ inch of water and microwave for 10 -12 minutes.

2. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

3. Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.

4. Place into a 375º for 15 – 20 minutes until golden brown on top.

Serves 6

Wow....it's sad that you can't bring homemade goodies into parties anymore. What about parents that can't afford it? Gosh. And the store bought stuff usually has preservatives and weird chemicals and sometimes transfats. I think people are becoming too paranoid.

to our thread, Kim. I work the night shift which is why I'm posting so late. You will see me talking during the wee hours of the morning all the time. I am married, no kids, 2 cats...work full time as a Medical Technologist in a hospital lab and blood bank. I plan on getting back on the LC wagon within the next 1-2 weeks. And I'm going to sign up for a water fitness class! There I said it. Now I have to do it or I'm a liar. tee hee.

Good morning sunshines.

We are going to be in the 50's today and then it kinda all goes down hill from there. Lots of snow and highs in the low teens. I better get out and enjoy the day while I can.

Mona, on the water fitness! Now you know we will have to nag you till you go! I think I am going to join the gym here. Not being able to go out and do my walks because of the cold and snow is getting to me.

Sorry I wasn't here yesterday.. I didn't feel so well.....

Kim.. welcome to the thread....I am not an exciting person..!!!

KCmama...The only thing I would consider but probably maybe too many people, would be bagels and cream cheese...I know at Costco, you buy one package and get the other for free.. and though I have always thought it was a funny thing to do, I have seen where they put bagel halves in a basket....instead of whole bagels....but I have no confidence in what I cook for someone else.. I probably would go out and buy a nice assortment of something myself.. I am not going to lie...

Mona.. I miss the water so much...that has to go on my bucket list....

Sue.. I will see you in the office....

We also have another great day on tap! Told oldest this morning that she needs to help me take down the outside Christmas decorations/lights today. We are supposed to have rain come in tonight. Only expecting 3/4" as all the rain has been poured out on Texas and OK on the way here.... but it is to rain tonight and some of tomorrow and then supposedly again on Saturday so I need to get stuff put away whilst still dry Wish we were getting more snow. It is January by gosh!
