QUinoa?

I know I'm going to hear that it has loads of carbs. And it does. But it seems to be low on the glycemic index on some sources, and I am supposed to eat some daily for an inflammatory condition I am fighting.

Thoughts?

It is a seed, so treat it like you would "nuts" if you are on Atkins .. actually a good idea anyway, for those of us hoping to change our mindset to a "thin person mindset" is to eat only small portions with your meal .. like 1/4 - 1/2 cup. It is not that bad, really! 1/2 cup is 22 net carbs. I try to stick to 50-60 net carbs daily even to lose weight and so that would totally fit in.

I do make it regularly for dh instead of rice and he eats more than 1/2 cup at a time - but he does not have a weight problem. I just try to cook healthier for him and my kids. He really really likes it more than rice or couscous, etc.

I think it's totally ok to add in on a daily basis, just make sure everything else with food is clean eating before you try it so you have good info on how it affects you, yanno??

Pauline,

That makes perfect sense. Trying to do a non-allergenic diet for a couple of weeks and this is on the list of "yes" foods.

Man. It is hard trying to do this WOE and fit in an elimination diet too! YIKES.

we use it about once every 2 weeks or so. i've used it like cous cous, with cherry tomatoes, feta, olives, spring onions, and artichoke hearts, drizzled with olive oil and lemon juice. a little oregano and cracked black pepper and you're good to go. or toss some shredded cheese, a cube of cream cheese and a bit of cream into hot cooked quinoa, and instant quinoa and cheese--very quick and tasty.

oh gosh I feel for you!!!!!!!! I have had to do elimination diet with one of my children before ... severe food allergies ...

In your case, depending on what-all else you can eat and what kind of carbs you will be doing, you might fit it in twice a day .. What is your allowed food list before you do add-ins?

I have a kid with severe food allergies too! Yes post the list and let us try to ponder over it with you.

I LOVE quinoa! I use the seeds, flour and flakes. I do believe it is very low glycemic, at least I eat quite a bit of it and I don't seem to have any negative impact.

An elimination diet does not sound fun, but I'm sure you will be much happier when you figure out what the culprit(s) is! Good luck!
