Wow, the gelatin really saved me today. I stay up all night unable to sleep and get really hungry. Whew! I made more tonight even. I've got to run out and get raspberry davinci's. I want raspberry gelatin! I never thought I would say that. It has some protein in it, but the thing is, it is somehow filling and satisfying. I never thought that before when I was on the standard starvation lowfat diet.

The clouds are still in the freezer! I can't believe my familiy hasn't wiped them out. I haven't had any. I guess that is why they are still there!

Tomorrow, er, today I guess, it's 3 a.m., I go to the doctor. I know my cholestrol is supposed to be going down on low carb, but I am kind of scared. My cholesterol is actually low overall, but he said my triglycerides were a bit elevated last time. What the heck? That isn't supposed to happen on low carb. We'll see.

L: Will carry meatloaf with me with spinach and a low-carb coconut flour/coconut milk cloud. Need to shop after the doctor.

D: Chicken with spinach lettuce and alfredo sauce.

S: coffee or decaf with cinnamon stick and butter and liquid sweetener.

I have insulin resistance-my posts are biased for this!

High fructose diets destroy liver's insulin sensitivity. Glutens bind up insulin and leptin receptors, interfering with satiety. Industrial vegetable oils contribute to inflammation of the liver that is part of metabolic syndrome. Read archevore/Kurt Harris for more info. Exercised muscles will up regulate insulin receptors.

L: meatloaf with butter and guacamole

D: pizza skillet meatloaf (recipe from alligator pie's current thread on favorite meals) on bed of spinach.

S: Knox gelatin sweetened with davinci's and a little cream or coffee with cinnamon stick

I went to the doctor yesterday; I'll let you know the outcome when I get the blood tests back. He was pleased, he keeps a chart of my weight loss. It is a very steady, but slow, graph. I always weigh less than the previous visit over the past 5 years since he has become my doctor. It hasn't bumped up once; I didn't know that.

He said I have an infection. Ugh, I thought it was my diet making me tired, I've been very concerned! Heh, just sinuses. Infections wreak havoc with insulin resistance (blood sugar goes up, lethargy, no weight loss). I'm on antibiotics, so I hope this clears up and I can be on my way again. Still, glad I did some investigating because the gelatin has really been helpful. I made knox gelatin with raspberry syrup. I think next time I'll just sweeten plain gelatin a little then squirt the Davinci's on top (because it seems to suck the davinci's syrup away in a flavorless way), maybe with a little cream (trying to get rid of the cream, but this is a good strategy, much more filling than coffee).

I made pizza skillet meatloaf again...meatloaf with pepperoni and a little romano sprinkled on top. My daughter adds more pasta sauce. Hmph, I don't think I am going to eat it, though. The more restrictive my diet becomes, the less appealing food except for the few core things I like. I like chicken!

I ordered Kwasniewsk's optimal diet books from Poland yesterday. I am really curious about it; I will apply it within the constraints of a paleo diet (still trying to minimize cheese and cream). I'm reading what the diet is on a couple of websites. He recommends eating 4 egg yolks per day due to the high vitamin content, and I forgot yesterday so I had some at breakfast.

He is Polland's Atkins; he's been denounced by the government for outrageous health claims. I believe it, though. I think his diet is really similar to the "elimination" diet used by people with allergies and autoimmune disorders. And we all know low carb is healthier for diabetics and people with heart problems.

I read that the Kwasniewski's diet is higher in fat and lower in protein than Atkins. Also, he developed the diet during the Cold War in the 70s based on his own observations in the health of animals he put on various diets (I think it was pigs).
