My new breakfast muffin
Is any one familiar with George Stella? He used to be on the food network, but I guess there wasn't much call for LoCarb and Lovin' It after a while. I've got 2 of his cookbooks and made muffins from one. Had to tweak it because I didn't have everything called for, but the results was delish....
2 C Almond Flour (I put 1 lb almonds in my food processor and whrilled it till it was almost flour consistancy) 1 tsp. baking powder 3 egg whites 1 large egg 1 cup sugar substitue (recommended: Splenda) 1 1/2 tsp. banana extract (I used 1/4 tsp almond extract) 1/2 tsp vanilla extract 1/8 tsp salt 2 tbs unsalted butter softened (I use Olivio..I like it better than butter and it still is 0 carbs) I sprinkled some cinnamon in my batter. Heat your oven to 350 degrees Mix all ingredients together Fill a 6 large muffin tin lined with paper 2/3 full....or you can use regular sized muffin tin and make fewer...not sure, never did it. Bake for 20-25 min til done. I put sliced almonds on mine. I like them a lot. They tend to be a bit on the heavy side, but very good. They would be super sliced in half and served with softened cream cheese. I'm going to make these when I go on vacation so I can control what I have for breakfast. According to the cookbook 6 servings 250 cal 20 gms fat 10 gms carbs 4 grams fiber 6 net carbs 9 grams protein. Last edited by Happy Granny : 06-29-2008 at 09:23 AM. |
