LOL You guys are too funny. Has anyone heard from Edna?

I didn't make the chicken I posted earlier instead I baked some breasts and covered with bacon and a slice of swiss, very tastey. I also made fresh spinach and garlic sauteed in evoo.

Black beans and rice for the rest of the family. Looks like DH will be driving to Reno for a class the next 2 weeks. Makes dinners easy for me

Looks delicious! I had some leftover Maple Spice Country Style Ribs I made out of a Dana Carpender slow cooker cookbook and some fried cabbage. It was pretty tasty, but I ate too fast to take a picture...lol.

Good morning everyone. I just wanted to check in before heading off to work. My size 26 jeans have been baggy on me so last night I pulled out my size 24's and guess what they fit yay!!! So this evening I'm going to pack up all of my 26's and I will have more room in my closet yay! Doing a happy dance for being down a size!

Have a great low carb day!

Well, I'm back on track.

I went to the dr. Friday, and after all the hard work I did last year to lose, I was only down 3 lbs from what I was Feb. 2007. I gained the rest back.

I started using my exercise bike, and this morning I used my Gazelle before I even went to work. (that's rare for me, but I thought it might perk up my sluggish metabolism.)

Also, I found out I have a hernia. It's an umbilical one. Has anyone here dealt with this? They made an appt for me with a surgeon on May 7th. I really don't want to have surgery. I had my belly cut open for my hysterectomy, and it was a long time in healing. I don't have the same problems as a thinner person would have, so it's hard to compare. I just wondered if anyone knows more about it than I do. (which is pretty much nothing.)

I hope yall are having a wonderful day. I'm feeling better already since getting back on track.

Carol, it's great to see you posting again! The job is going well, I really like it. I like the people I work with as well. They are a lot of fun. It sure takes a lot of my computer time away though. (except lunch, like now. LOL)

Yall take care!

Ok...now that I have a min I can post my day.
I have been sick for 3 or 4 days now but finally have it under control I think.
Does anyone know what taking antibiotics does to ketosis??
Anyways, I have been reading thru the boards and want to try oopsie rolls today but not sure if I am brave enough to try it yet.
I did make pumpkin cheesecake muffins today though! WOW! Is this stuff good! Same basic recipe but incorporated 1/2 can pumpkin and 1 tsp pumpkin pie spice. Smells wonderful and tastes even better!

Here's my food for today:
B-2 sausage patties fried, with 1 tblsp onion, 1 egg scrambled in and 1 slice cheddar
L-1 beef pattie grilled, 1 slice cheddar, 1 tblsp onion, 1 slice tomato, 1 dill pickle spear, ranch
D- not sure really, maybe meatloaf and bed of lettuce w/ranch
S- 1 pumpkin cheesecake muffin yummy!

Oh and lots of water thru out the day....

Hope everyone is have a great week.

Hi Everyone-

(a long overdue) Welcome to Edna and Nikki!

Congrats to everyone who is shedding weight! WOOHOO!!! WTG!! Hope I can add my name to the list of folks who shed some weight next week! Also the non-scale victories are wonderful-closet shopping and fitting into a smaller size is AWESOME! KUTGW!

Brenda-Glad to see you're back on track. So sorry to hear about the hernia-when you see the surgeon is it a consult or the actual surgery? I'd ask for some details. Can you call his/her office and speak to the surgeon and/or the nurse? **hugs and prayers** for you.

I'm still job hunting and not finding anything. Job market is BAD right now but I'm going to keep trying.

Hope everyone has a great day!

Carol,

I'm so excited for you to meet your Emmie! The ribs were good, there are so many of the crock pot recipes that I am going to fix! The ribs tasted a little sweet and a little spiced. Kinda like BBQ sauce but no sauce. Here's the recipe:

3 lbs country-style pork ribs
1/2 cup sugar free pancake syrup
3 T splenda
2 T soy sauce
1/4 c chopped onion
1/2 t ground cinnamon
1/2 t ground ginger
1/2 t ground allspice
3 cloves garlic, crushed
1/4 t pepper
1/8 t cayenne

Put the ribs in the slow cooker. In a bowl mix together remaining mixture and pour over the ribs. Cover the slow cooker, set it to low, and let it cook for 9 hours.

6 servings, 382 calories, 29 g fat, 27 g protein, 2 gm carb, tr dietary fiber, 2 g usable carbs.

I used Walden farms syrup, which has 0 carbs so the carb count was probably even lower than the 2 per serving, but I counted them anyway. I have eaten them 3 days in a row.

Welcome back Brenda! You've had so many changes this year, it's been hard to get back on track. I'm glad you've done it! Going to the doctor puts it all in perspective, doesn't it? The hernias are common with extreme obesity and if you've had a previous abdominal surgery you are much more likely to develop them. If it isn't bothering you, it is probably ok. Many people wait until they've lost weight before fixing them. If you start to have pain related to it then it is much more urgent to fix.

Thanks Junebug, I am so excited to be dropping the weight like I have this month--it's been a long time since that has happened.

Arlene, that plate did look beautiful--even though I did cut the cheese...

Brenda, so glad to see your bk on track again.

Kim, I sure wish I had the recipe yesterday.. I cooked ribs and devised my own seasoning. They were ok, but definitely not bar b q ribs or anything close. I think its the sweetness that I missed, Don't know y I didn't think of adding splenda. AT any rate going to keep this and try again next week.

Carol, just a few more days!!! Are you ready??? You will be floating on air. When you hold her for the first time, oh gosh, there r just no words to describe it........God bless you all

Heidi, mac nuts and a bit of cheese is not bad, not at all. You seem to have a good handle on ur eating. If its not showing on the scale , its gonna eventually.

Edna, so glad you are feeling better.

Laura, I still have u in my thoughts. Hope you find that job really soon.

Hope everyone else has a good low carb, exercise, water sloshing day

Hi Ladies!!

WTG Nikki!!!

back Brenda! Sorry about the hernia.

Edna - Glad you're feeling better. I tried the cheesecake muffins once and they sunk in in the middle. Not sure what I did wrong, but I'm thinking of giving them another try soon.

Laura - Good to have you back! How did the lasix go? Must be a great feeling to wake up in the morning and be able to see! My glasses hit my face before my feet hit the floor

What are you going to have? Yes, I'm living vicariously through you Oh, you're going to a seder right?
So exciting that Emme will be here in just 5 short days!

Kim - Boy do those ribs sound good! I've been craving ribs big time between Dale making them on "Top Chef" last week & us watching a "Good Eats" episode about ribs last night.

I hear ya about the gas prices ($3.55/gallon here ), but can I just say how envious I am that you & Kim are within driving distance of one another?

good morning,
today I did something I have not done since 8/30, I ate something off plan... it wasn't too bad, but still, I just did it and I am not too happy about it. I had a bite, prolly 2 T of humus, at work. not the worst thing, but I like to reserve my carbs for veggies.

Carol, I eat tahini as a dip on raw veggies, or I mix it into that eggplant spread or thin it out with water & lemon & garlic and put it on chicken, as a sauce.

That's not bad at all Heidi. Better than cake right? IMO hummus is healthy enough that it shouldn't make you feel a bit guilty.
