Stacie~ I ordered the largest size that this dress comes in... so I'm in the same boat! If it doesn't fit, I'm not sure what I'll do! BUT, we both have enough time to have lost a substantial amount of more weight! AND WE WILL!!!

Yep! I've made a few different variations.. Here they are if you want to try them out! One thing to take note (which might help with portion control too)... before I nuke these I pour the 'batter' into two smaller espresso cups (about half the size of a normal coffee mug).

Original OMM (from this thread)
1/4 cup Flax Meal
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinnamon
1 Egg
2 teaspoons Butter

Mix the dry ingredients in a large coffee cup. Add egg and butter (and torani if using tweaked recipe); mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.


My tweaks - for this one I've added a teaspoon of banana davincis to make a "banana muffin" or used blueberry davinicis. Also, I've made this version into a "bread" by omitting the cinnamon and splenda, added some garlic powder and a teaspoon of "Essence of Emeril". I nuked it in a square tupperware container, then sliced it in half horizontally then toasted it, put a few slices of cheddar cheese on it then nuked it again for 15 seconds.. YUM 'wannabe' grilled cheese!

Chocolate OMM

1/4 Cup Flax meal
1/2 tsp Baking Powder
1 Tbsp Splenda
2 tsp. Torani Chocolate SF Syrup
1 Tbsp unsweetened Baking Cocoa
1 Egg
2 t butter

My tweaks - for this one I've changed up the syrups a bit, today I made one with SF Torani Irish Cream syrup.. yum. Also, I've made one with peanut butter--make everything as noted above then before you nuke it put a tablespoon (or however much) of peanut butter (I use Smart Balance) in the top of the cup, when you heat it it will fall to the bottom or get stuck in the middle!!). My FAVE tweak for this version is adding a scoop of my Syntrax Nectar whey protein powder (the vanilla bean torte flavor). I prepare the recipe as noted above then add a WHOLE scoop. So it ends up being approximately 11 carbs for this version, if you count the 'net' carbs it equals out to be 2 from what I've read so far.

This weekend I was really good (as you all know, weekends are a challenge!). We went to a big extended family get together on Saturday for brunch (I had coffee, quiche, sausage and bacon) then to see Horton Hears a Who with one of my brothers and two of my neices (VERY cute movie!) and had no snacks! Yesterday, my hubby and I went out to brunch and I had a denver omelet minus the onions and with cottage cheese and tomato slices instead of hashbrowns and toast. For dinner last night, we had delicious steak and broccoli/cauliflower with some butter and parmesean. This woe is delicious!

Today's Menu:
B- 3 Oopsies w/a little cheese (3)
S- Atkins shake (1)
L- burger patty w/cheese, grilled chicken strips from Jack-in-the-Box (6)
D- some kind of meat and veggies (~8)
TOTAL= 18 carbs / 3 liters of water

Tonight's my second time leading the Young Life sophomore girls. Wish me luck again!

When I was in my brother's wedding a couple of years ago, I had to order extra fabric for my dress. I hope it fits well for you, but bridemaids' dresses are notorious for running small. You may want to order some extra fabric just in case. But you're doing well, so I hope you won't need it

Thanks Jennifer!! oh wow a Cubs fan?? should've never told me that! lol..nah, I have no problems with Cubs fans except for the ones who are arrogant and rude and scream and yell not so nice things in your face and from experience I hate to say that it's the majority of them. lol...but definately not you!

I'm sick-sick-sick!!! blech! went to work and got ugly stares from others, but I'm almost positive it's from allergies, and pretty much I've got a cough settled in my chest and just a little sinus drip.

Smile 100 lb Challenge

Hi Guys,

I would love to participate in your November challenge. I am a lurker who has been doing Atkins since 1/1/08 and using these boards as a source of inspiration and motivation. This is not my first time lo-carbing. I have been doing it off and on since 2000. I lose, then gain. I am determined to get to my goal this time. My Dh is taking this journey with me as well and that has made this attempt so positive. We have not strayed from plan since starting. We have enjoyed many of the recipes posted by this board.

I do not own a scale since. I view it as a distraction. In the past, my mood was determined by the numbers on the scale. I am measuring my success by the way my clothes feel and by my upcoming physical in May. I must admit, the weight is not dropping as quickly as it has in the past, but I am confident that it will. I have even started exercising at a gym to assist in my journey.

I may not be able to post daily, but I will make every effort to post a couple of times a week as a participant in this challenge.

B ham/egg/cheese scramble, coffee, lt cream
L turkey/cheese/lettuce/mayo on lo-carb pita
S flax muffin w/ cream cheese

Hi ladies!!! Just checking in!

Last night with YL went just as well (if not better) than last week! I'm hoping to start a "Campaigners" group with them (that's Young Life's term for small group Bible studies) and also hoping to go to camp with these girls in August! Such fun!

Oh... I also JUST realized that today's the day that my mini goal of not eating any low carb tortillas and eating way less cheese and Atkins shakes ends! I made it!!! I DO think that it seemed to help initially, but now I seem to be stalled again (I'm up a couple pounds, but I still FEEL like I'm shrinking), so who knows!? Either way, I don't really miss these things anymore, so I think I'll stick with it... although I might have a lc tortilla every now and then...

So, time to come up with a new mini goal... hmmm... stay tuned...

Today's Menu:
B- CO bark, turkey sandwich on Oopsies (5)
S- coffee (0)
L- chicken ceasar salad (5)
S- pepperoni w/brie (3)
D- fajita salad (6)
TOTAL = 19 carbs / 2 liters of water (I need to work on drinking MORE!)

Hi Guys,

Worked late and was not able to make it to the gym tonight. I made definite plans to go tomorrow night with my gym buddy. We try to go at least 4x a week. Sometimes life gets in the way!

Made good food choices. Tried the cream cheese muffin that someone posted with no-carb Walden Farms strawberry fruit spread. At 2 carbs, it was pretty good.

Cream Cheese Muffin

2 8oz. pks. philadelphia cream cheese
1/2 cup sweetener (I use spenda)
2 eggs
1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

B 3 strips bacon, coffee/lt cream
S cheese stick, pepperoni slces
L Turkey Cobb salad/dressing, iced tea
D grilled burger, mashed cauliflower
S cream cheese muffin/no carb fruit spread.

yes, I'm feeling better - thanks for the good thoughts, they're helping!

went to dinner with DH and one of his client...fun, fun, fun! *sigh* had a pretty icky day, and ready to head to bed. I'm guessing it's a sidebar of the not feeling good.

Hope everyone is doing well! I weighed in at 211 this morning.. eh.. I woke up about 4 hours earlier than normal so I'm assuming that didn't help any. Oh well.

We're back from the beach and just want to get a quick update posted. Will be back online later today to get caught up reading. Hope everyone is having a great week. I had a couple slip ups, but nothing major. Planning snack foods ahead of time saved the day! Did lots of walking... Down another 1.5 lbs for a total of 41.5 lbs since January 3rd, so I am so happy!!!
