What does gluten free mean?
I thought gluten free meant no carbs but when I read the nutrition labels they all have a good amount of carbs in them?

If I can not find a low carb item will gluten free be the next best choice?

gluten is wheat protein. a few other things too, but not carbs.

you should look for gluten free if you have a problem with wheat, but it does you no good in terms of low carbing, dieting, or health in general.

gluten free is a huge fad right now, so there are more gluten free products. remember when Fat Free was all the rage and many fat free products just had more carbs and sugar? well, gluten free has to replace the wheat with something, so you will probably be getting soy and corn, both of which have plenty of problems of their own.

if you are low carbing you will pretty much be gluten free without thinking about it, but gluten free per se is not something to look for.

bread is still bread, pasta is still pasta and cake is still cake ( the gluten free version just costs more)sometimes the gluten free version is far more processed and nutritionally worse for you than the original- sometime better- it all depends. I do but some processed GF foods ( pretzels, pasta, cookies) because my son is GF and he is a kid who still needs stuff like this. I am also gf- but I don't eat the "grain" products. If I do- I try to use whole grain flours and bean flours most often. - but don't kid yourself- they ARE high carb foods.
