Easy Easy Easy gf dumpling wrapper!!!!
Hi, My name is Christine and I have been trying to be gluten free for a while. I have gluten ataxia--meaning whenever I eat gluten it attacks my brain instead of my stomach. I get arm tremors, My muscles seize up and become weak and after awhile I start walking like a drunk person.
I am fortunate that I live in Oklahoma City which has a very large Asian population. We have an Asian market the size of a Super Walmart! There I can get all manner of rice pastas, rice flour and all manner of rice related goodies at a fraction of the cost we spend at the health food store.
My problem is I make dumplings aka pierogi all the time but since the wrappers are wheat--I can't partake. I've tried a couple of recipes for gluten free wrappers but it was just too time consuming and hit and miss on the success.
Today was a breakthrough that I had to share!
Take three sheets of rice paper (used to make spring rolls) soak together in warm water until all sheets are soft. Put all three sheets down on a cutting board or cookie sheet and cut out a disk (I used an empty tuna can). Put dumpling filling in the center. (now with wheat wrappers you have to wet to stick together) but with rice paper you just wait a few seconds until it dries and becomes sticky and it it will naturally stick together! I fried my gluten free dumpling filled with potato and onion in a little butter and it became crispy! Ate it with some sour cream and it was AWESOME!
This is a monumental discovery for us gluten free folks now we too can have dumplings!
