G-free waffles
I just had some yesterday and wow!
They are SO good!I've been G-free for a little over a year now and for the longest time I just ate low carb and whole foods. I would get sidetracked with sugar at times just because I felt so bad on LC. I'm now doing JUDDD and thought I would experiment with other G-free foods. The healthfood store I go to now has more and more foods to choose from and I bought some Van's G-free waffles. It was SO nice to be able to eat waffles without burning and pain in my belly and all the other nasty side effects of eating gluten. ![]() I tried some Udi's bread a while back and loved it! I bought another loaf of that too! I also found some G-free canned soups for days when I need a quick meal or when I'm under the weather. I love the freedom JUDDD has given me in eating regular foods again and I love it that I can now have waffles and sandwiches with some great G-free products! |

If you want you make your own GF waffles, here's a recipe:
1/4 cup coconut flour 6 eggs 4-6 TBSP butter 2 TBSP Splenda 1 tsp vanilla Melt the butter, add coconut flour until smooth, crack and mix in eggs one at a time until well incorporated. Add splenda and vanilla. Pour into waffle iron, cook to desired doneness and enjoy! They are wonderful! |

I posted this back when i was doing JUDDD and then I switched back to LC and now I'm back to intermittent fasting. I'm all over the place LOL! This is working for me though and my mood is great. LC affects my mood and I can't hang very long. I may have to buy some more waffles now, they are sooooo good!

Tried these tonight. Were a little dry but very yummy. One recipe made 2.5 waffles in our belgian waffle maker, so probably 5 or so regular waffles.
