Gluten Free AND Low Carb

Anyone here eating gluten free AND low carb? Do you find that the gluten free foods typically are high carb? I have been sticking to mainly meat/cheese/veggies, but am interested in broadening my eating plan a bit.

Yes i am gluten free and low carb. I find that all the replacement stuff for those of us gluten free are extremely high in carbs. You are doing the right thing by eating mainly meat, veggies and cheeses. I eat mostly these things but am working on trying different sauces and seasonings so that i do not get bored.

Two fantastic things to add are the oopsie rolls that are on this site, as well as the stuff made with flaxseed meal. The flaxseed muffins are gluten free, low carb, high fiber and really filling. There are a lot of recipes on here experimenting with coconut, almond and soy flour which are all low carb and gluten free.

Im Low Carb-Paleo, so no grains or dairy.... Cant consume dairy anymore, and lately I just dont like the violent migraines, stomach upset and puffy face I get from grains/breads, so Paleo was perfect for me. Absolutely NO processed foods whatsoever....

Unfortunately I got glutenized yesterday so Im still feeling the effects and its very painful and miserable.

I was just reading about the Paleo diet. It's similar to what I'm doing, but I do eat dairy and do not eat certain higher carb vegetables like carrots.

I'm going to the dr tomorrow to discuss the gluten free thing. I have not had any testing done, yet, but I am pretty sure that is the problem since when I eat bread/pasta/noodles or other things with it in there I get sick. I don't really need a doctor to tell me that is the problem - I just want to make sure I'm getting the right vitamins, etc. since I'm no longer eating any grains.

Just remember that if you do want an accurate diagnosis, you will have to eat gluten prior to testing or you could have a false negative.

I had the test done, but I told the doctor that I'm not willing to eat gluten just so he can tell me what I already know. Maybe that sounds dumb, but making myself sick just so they can tell me something I already know isn't worth it to me!!

I completely agree with you. I didnt have the biopsy done for that reason. I did the blood test and once that came back positive, i cut out the gluten and didnt look back. Just remember to stick with it no matter what and you will feel good. I have had a bad couple of weeks because it is so darn easy to get gluten accidentally.

I bought the most delicious gluten free chocolate chip walnut cookies last night..........and now I know I can never buy them again 13 carbs in each cookie!

I need to stick with the simple things like meat, cheese, nuts!!!

Which brand of cookie did you buy? Pamela's?
If you are ever in the mood for an off diet treat, i think the Bob's Red Mill chocolate cookie mix is the best ever!

I'm gluten free and low carb, and I eat all kinds of veggies including starchy ones. I don't buy "gluten free products". They are usually not protein/veg/vat but beans and grains etc.

Yep - I had the Pamela's ones. I will look for the Bob's next time I buy something I'm not supposed to I was at Schnucks market here and they had a little end cap with all gluten free stuff on it so I felt like I *had* to buy something! Haha

Yes Seejay - I've started eating some starchy vegetables, too. I am hopeful that will keep me more on track not eating the processed stuff.
