Gluten-free is starting to catch on

I was reading an article in the USA Today yesterday titled 'Gluten for Punishment' and it talked about how more & more people-even though they don't have celiac & they're not gluten-intolerant-are starting to delete gluten from their diet. Very interesting article. It said most people start to feel better off of gluten because they are no longer eating processed foods. (since most processed foods have gluten-containing properties)

I am one who feels soooooooooooooooooooooooooooooooooooooooooooo
much better off of gluten even though I do not have an allergy to it. I just do not like the way it makes me feel.

Here's an article I did about a local gluten-free bakery earlier this year. It was an interesting project. I learned a lot about gluten intolerance -- I had no idea. Unfortunately, I learned that a lot of people manage to go gluten-free without any reduction in carb intake. Low-carb is just not part of the standard message in the gluten-free community.

I think a lot of people are gluten-intolerant, at least to some extent, but they don't know it. When I found I had Celiac Disease and had to go gluten-free, my husband decided he would too, just because it was too difficult to keep different utensils for gluten-free and not-GF, and to cook separate meals for the two of us, making sure not to contaminate mine with gluten from his.

We know he doesn't have Celiac Disease, but surprisingly after a few weeks on gluten-free he began to feel more energetic, to sleep better (and without snoring!), and he no longer had the problems with upset stomachs and gas that he used to have. He still eats some gluten, but not at home. We go out to eat every couple of weeks, and he gets bread, and sometimes breaded shrimp or something else breaded or fried. And the next day he always feels "not quite right."

Similar story with my parents..dad was diagnosed with celiac. My mom was constantly cooking two different meals, buying two different sets of groceries.

Finally, she had enough and just ate what he did. Her pre-diabetes went away and she dropped about 10 lbs.

I don't eat processed things or really anything with grain and feel a lot better. No more stomachaches.
