Visiting aunt can only eat "gluten-free". What does this mean?

Is this low carb? She's coming to visit from Europe for 2 weeks and I need a heads-up on how to cook while she's here. But if that's lc, then I'm all set.

yes, it will be lc in most regards. it means she doesn't eat any gluten, which is mainly found in wheat and some other grains.

Gluten free means that she has to avoid the protein gluten, which is found in wheat, rye, and barley, kamut, oats, foods with gluten added to thicken them (many processed foods have this).

Gluten free can be a low carb diet (my friend is celiac and eats gluten free and lowcarb). But some celiacs eat tons of other processed stuff that is high in carbs but has no gluten in it. They have cookies, cakes, breads, basically everything made with non gluten grains so these are carby. Plus, they can eat potatoes and quinoa.

So it depends what kind of gluten free diet she is following- if she replaced all the glutenous grains with safe ones or if shes avoiding grains altogether.

But, low carb should be fine. If you have Meats, veggies, cheese, butter, oils., fish, and eggs she can eat all those things. Just make sure to check the labels of processed stuff, gluten is added to so many things (esp sauces and soups, condiments). and if she wants gluten-free stuff like breads and cookies there is always a ton of products in the health food stores.

Anything that doesn't contain wheat is fairly safe. I have a friend who has celiac and she has to eat rice pasta, gluten free bread- but she can eat potato chips!
