Gluten, Soy, and Dairy free low carb meals

Hey Everyone,

I've noticed that quite a few of us are eating gluten free.
I know that some are trying to not eat soy as well.
Dairy is the real kicker. It takes alot of fun out of lo carbin.
That is why I am asking for help with planning some tasty gluten free, soy free, dairy free meals.
I greatly appreciate your ideas.

I've had many of you ask me what do I eat.
So, I will list some menu ideas.
You can add dairy but none of my meals contain dairy.
I also had a reaction to walnuts yesterday.
So, I will not include nuts either.

This should be very clean eating.
Give me your ideas please.
I had been doing Weight Watchers therefore, I was eating tons of carby stuff that I can have but it was reeking havoc on my blood sugar.

Breakfast ideas:
Breakfast is the easiest for me.
It's dinner that is difficult.
I lack variety.

eggs cooked any which way
bacon or sausage no nitrates, no hormones
coconut cream in coffee
flax seed muffin to dip in my egg yoke.

Spinach saut'ed w/ onion & garlic wraped inside omelete
sliced tomato

couple of sausage links sauted w/ some veggies such as zucchini

flaxseed muffin w/ blended strawberries sweetner w/ stevia poured over
couple of sausage links

Here are some lunch/dinner ideas:

rotesseri baked chicken, salad w/ oil & vinegar

chicken salad served in lettuce leaves, kalmuta olives, sliced tomatoes

saute'd chicken w/ onions, zucchini, squash

grilled steak w/ grilled veggies, salad

grilled chicken w/ grilled veggies, salad

roast in crockpot w/ green beans & onions, garlic

taco flavored meat served in a salad w/ avocado, black olives, onions

taco meat served in lettuce wraps loaded like a taco.

hamburger w/ mayo, lettuce, tomato, onion, fried green beans

chicken, broccoli, mayo all mixed together and baked 350 for 20-30 minutes add crushed pork rinds on top.

pork chop, cauliflower tatertots

grilled salmon, faux tater salad

pan seared tilapia, California mix steamed veggies

The best idea I think would be a Paleo-type diet. Meat, eggs, fish, veggies, fruit. Butter if you can, if not, olive oil and coconut oil. Almond Breeze is an awesome milk sub for shakes... so is coconut milk.

You can make "oopsies" dairy free. Use mayo (homemade or commercially made without soy oil) or avocado instead of the cream cheese.

I did WW Core for a while and really liked it. There are grains that are gluten free (you can get gluten free oats now!). But I didn't like the nonfat dairy, the strictly lean meats and the tiny bit of oil that are permitted. The beauty of low-carb is that fat is not restricted!

Check out gluten free girl dot com for her ideas and recipes. Not all are low-carb but she's got a wonderful way of writing and a chef for a husband.

I would also recommend Jennifer Cornbleets raw for 1 or 2 people. She has some nice recipes that are gluten, dairy and soy free for you.

Grilled chicken tossed in a cold salad of avocado, cherry tomatoes, red/yellow peppers, red onions, cucumbers, fresh basil and olive oil dressing.

Grilled veggies on kabobs

Depending on your plan, for variety you may want to add some non glutenous grains at 1/2 cup per every other day to see how you do. I make a fabulous quinoa salad with black beans, tomatoes, cucumbers, basil, pine nuts and olvie oil.

Something I love is cucumber, jicama, celery root, 1/4 cup lime juice, 2-4 tbs. olive oil, cilantro to taste, sea salt to taste and about 1/2 tsp. chili powder.

I hope this has helped.....and I really think that a raw foods cookbook might just help. you can make pate's out of walnuts and pumpkin seeds too. Garbanzo beans are also a good friend to the celiac. Have you ever made your own hummus? It's easy
1 can garbanzo beans
2 tbs. lemon juice
2 cloves of garlic (or more depending on your taste)
1/4 cup olive oil
2 tbs. tahini

Along the lines of hummus... dont forget Baba Ganoush! Basically the same thing, but eggplant with lemon juice, tahini, garlic, salt, and pepper.

Lately, I've been making nut-crusted pan sauteed fish and chicken. Just grind the nuts coarsely in a food processor. Then dip the fish or chicken in beaten egg, and then press into the nuts.

The homemade chicken soup and beef stew I make is all dairy/soy/gluten free.

Do you like seafood? Crab cakes with roasted red pepper sauce, salmon cakes, cioppino, shrimp cocktail (make a nice mustard/mayo dipping sauce or lowcarb cocktail sauce), bacon-wrapped scallops.


Regarding desserts, there is a pumpkin pie made with coconut milk to be dairy free. Here I will post the original recipe and perhaps you can adjust it to use splenda or davinci's sugar free syrup to replace the sugar. And then perhaps to replace the graham cracker crust you could use a nut crust (eg crushed nuts and perhaps toasted coconut mixed with oil, pressed into a pie pan, then baked).

3/4 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons Pumpkin Pie Spice
2 large eggs
1 can canned Pumpkin, 15 oz.
3/4 cup organic coconut flakes
1 1/2 cups organic coconut milk
1 teaspoon vanilla
1 whole graham cracker crumb pie crust, 9 inch, deep dish

Preheat oven to 350 degrees Farenheit.
Whisk together the sugar, salt and pumpkin pie spice in a small bowl. In a large mixing bowl beat the eggs, add the canned pumpkin, spice-sugar mixture and 1/2 cup of coconut flakes. Stir in the coconut milk and vanilla until well-combined. Pour into graham cracker crust.

Bake for 55 to 65 minutes until a knife inserted into middle comes out clean. While pie is cooling, lightly toast 1/4 cup of coconut flakes in a 300 degrees F oven or toaster oven in a metal pan until golden, 5 to 8 minutes. Serve pie with whipped cream and garnish with toasted coconut. Serves 8


You might also want to experiment with using coconut milk to cook meats - in a carribean style (sorry, i dont know recipes offhand, but there are curried fish stews, etc) or using coconut milk to make desserts like panna cotta .

I saw this and thought of you.
Low carb strawberry icecream - dairy free with coconut milk. It uses sweetzfreeze (liquid splenda - you could sub) and erythritol. Not sure if you could just sub all splenda or if it affects the texture. (I have never used erythritol, so I'm not familiar with it..)

You may also want to look into this product - a vegan cream sub from almonds and cashews. The unsweetened product looks quite natural.

WOW strawberry! That Non-Dairy cream looks fabulous! DH is going on an anti yeast diet this week as we think he has fungal sinusitis. (the side of his face in correlation with an ear problem is feeling strange) His one true love is his cream in his coffee.

As far as erythritol, I think it's the nicest sweetener for something like the ice cream (which also sounds awesome) You can even combine xylitol and erythritol

Do you like panna cotta? It can be made just as tasty with coconut milk.

I have a recipe for gf dairy-free carrot cake as well. Can you tolerate butter or not?

Hey uniquelymade, just noticed you had sausage links on this list. . . . those probably have fillers with gluten. Or did you find gluten free sausage links somewhere? I'd be curious to know. I was just diagnosed a few weeks ago, and am on day 8 of gluten free!
