No Gluten, Soy, Dairy, Corn.....I'm headed to the BEACH!

Hey ladies,

Make room for me please....I'm coming to the beach!
I have been struggling terribly with celiac disease.
I can not EVER eat gluten again.
I also have a dairy, soy and corn intolerance.
It's beyond an allergy. If I eat those foods I actually hurt all over like I have the flu. I have tummy troubles, headaches, and can't think!
Dairy really makes me foggy headed but I MISS it so much!

Anyways, after much thought, prayer, trying this diet and that diet, I have decided to try South Beach. Atkins without dairy is boring.
And Weight Watchers just didn't work.

So, here I go to the beach!

I think that she loves dairy,it makes her feel bad,but she knows that she needs a plan that will allow her to eat it- just in case she eats it anyways...(I think)......

What I am saying is that I can not have dairy at all and it is very hard for meto do Atkins w/o dairy. SB allows foods such as beans and fruits and some starchy carbs that will make it a little easier.

I'm celiac too so I know your pain. When I have anything with gluten in it (by accident now because I avoid gluten like the plague that it is) I get all the symptoms you described plus I feel so nauseated afterwards that throwing up would be a blessing. I miss dairy too but it congests me something fierce and I prefer to breathe clearly.

Have you ever experimented with Quinoa? It's a fabulous non-glutenous grain.

Hi Fawn,
I bought some Quinoa and Quinoa flakes but I really don't know what to do with them.
I'm going to do some research and find out how to use them.

I also bought some certified gluten free oatmeal today.
It was $14.00 for 2 pounds!!!

I'm really just trying to concentrate on learning how to eat with out all the foods I'm allergic too and try to get some weight loss too.

I understand! It's definitely a bit of a quandry that you're in!!

I eat Quinoa. You make it like rice 1 part quinoa, 2 parts water (I use broth) and a drizzle of olive oil cook for I think about 25 minutes until fluffy. To mine, I add a myriad of things
black beans
garbanzo beans that have been sauteed
feta cheese (you could use goat cheese)
pine nuts
fresh sliced tomatoes
garlic
fresh basil
and always olive oil. mix it up and serve at room temp.

I liked doing South Beach. It was very easy to do, and I found myself having less of an appetite. I'm still sort of doing SB, but more so just doing LC my own way. I think the only thing that is different is the fact I'm not eating low fat, but the other elements are basically the same. I don't know if I could ever do something like Atkins, cause you virtually eat no carbs on induction.

Hi I went thruogh this a few years ago. Google for some recipe books for allergic people. There are many gluten free flours you can try . Also check out if you can eat hormone meats , I can't. There are many websites you should visist also. PM me if you need help finding them. I did this for 20 years and they couldn't figure out I was allergic to the world.

I know what those flu like symtoms are. I was sick all the time. I have 3 allergic recipe books. There are still alot of foood you can eat .

I bet I could make a mock stuffing out of that.
I've already ordered my organic turkey.
This would be a nice side dish.

Rosethorn, I don't know why but it helps me to know that others have gone through this or are going through this. I do best with organic foods and organic meats. I have visited many sites that have a lot of recipes but they seem to carby for me. Gluten free eating is generally very low fiber so, the addiction of beans have been nice for me.

I am probably really doing my own thing as well but it seems to be more in the SB arena. I don't know why but it's like I have to identify myself with a name of a diet or else I won't stay committed.

I am doing a moderate fat version of SB.
