Help: Gluten free, Dairy & Soy Free Diet
Hi everyone,
I haven't been around here in a while. ![]() I've been sick for 1 1/2years now. I was just diagnosed with Celiac disease. I cannot have Gluten which is in wheat, barley, rye, oats, and most processed foods. It makes me TERRIBLY sick. I have been off gluten for 6 weeks now but have now had a reaction to dairy and soy! It's been so hard.I want to get back to Atkins but it seems so hard not having the dairy. The dairy like cream, cheese, and butter made Atkins liveable for me. I just don't know if I can really do it without those foods. I would appreciate any of your thoughts or ideas on this. Thanks!

the is a really wonderful magazine calle Living without that is for folks with gulten allergies.
that is a tough diet to stick to, I wish you good luck. Perhaps feeling better will make you miss your dairy less?? |

My mom has celiac and myself and my 8 year old are "sensitive" to gluten and dairy. I use marg spray for butter and carnation liquid for coffee. It really is tough but gets easier, I find that if you exercise consistantly and slip up it gets through your system faster. Britain is also a great place to visit for gluten free stuff, restaurants and super markets have TONS of stuff!! I miss oatmeal and have it once in a while, it kills my mom though - good luck |

I am so sorry to hear what you are going through. I feel your pain--I love cheese, butter and cream cheese. Haven't had to do without though. Since soy is in practically in everything that is processed, you will probably have to have just protein and veggies with not much added. I am thinking chicken with veggies, shrimp and veggies...you get the idea. I think that if you can add coconut oil to your diet you can get some relief. It is supposed to help with inflammation. Can you tolerate the low carb fruits, like berries? Good luck!!

I am pretty much dairy, wheat and soy free and I have never felt better! To be honest, these foods are not health foods, so I would try and see it as a sorta gift-- a larger incentive to stay healthier in the long run. I know it seems awful right now.
Can you still have whey, and fermented dairy, or are you completely intolerant to milk? I would replace "snacky" foods with seeds and nuts.... eventually some LC fruits... there are great products out there that can substitute for these foods (seaweed wraps instead of tortillas, authentic shiritaki noodles without the tofu). Concentrate on finding good condiments that you can tolerate (IE certain salsas, mustard, infused olive oils, LC marinara sauces, etc). Learn to love stores like whole foods and trader joes... this WOL is much easier than it seems! Ghee is clarified butter with the lactose removed-- that might not bother you.... Dairy foods are also pretty addictive, and I think if you remove them, after a few days or weeks you won't even miss them anymore! You can do this! You will feel great... I'm sorry you've had to deal with all of these issues. |

I would also recommend Almond Milk Many times, one with celiac can tolerate goat & sheep milk and cheeses as well as kefir. If this were me, I would probably think about checking out a book store for some really nice mediterranian style cookbooks. |

It must be quite discouraging to learn that you have celiac disease; I am sorry.
I do not eat any gluten, dairy or soy even tho I do not have celiac, and I think that I eat better than I ever have in my life. I would concentrate on all of the wonderful foods that you CAN have. Find foods for each meal that you actually look forward to, that are filling and that are healthful. Then hopefully, you will find that you don't miss the others so much. I love cheese, but don't miss it at all because my meat sauces are rich and delicious and my salads are loaded with veggies and mayo. I love ice cream and other milk products, but don't miss them because I make a whey protein smoothie every morning, with strawberries and real cranberry juice that is to die for. I love fresh breads and cereal, but when I get that need for crunchy, I chew toasted golden flaxseeds, so delicious! Good luck to you in finding lots of healthy food that you love. cheers, Wendy |

I second the almond milk idea that Fawn had. My son has Autism and we are on a gluten free/casein (dairy) free/soy free diet. He used to just love chocolate milk, but we found a nice alternative with Almond Breeze chocolate drink. I even like it. Also there is a yogurt out there called "Ricera Yogurt". You can buy it at Whole Foods. Isn't bad. Actually tastes a lot like real yogurt, if you can get passed the brown color of it. I even bought a yogurt maker and am going to try making my own with the vanilla almond milk. Good luck to you and know that there are a lot of us out there in the same place you are.

You probably can have dairy as long as it's the right kind of dairy. You probably shouldn't have ANY grains at all, even if they say it's okay. |

I have celiac disease. It is so awesome to know what is making you sick! And it's controlable - you don't have to have surgery, take medication, anything like that. You can totally control it with diet. It is so empowering to know that you have control. You can make yourself better!
I have basically adapted my diet to one of meat, fish, fowl, vegetables, eggs and a little fruit. I occaisonally will go to Whole foods and get some Gluten free treats like pizza crusts, or cookies, or bread. It is much cheaper though to go without. Learning how to cook with in season produce can make a big difference in how you eat. Just with that small move, you go to a more whole foods approach to eating, and you will feel so much better. From one celiac to another, nothing feels better than feeling good, and healing your body. It's worth the constrictive diet! Check out a blog called gluten free girl, it is pretty awesome! |

Hey everyone, I looked into almond breeze and it has soy lecithin in it.
I react terribly to soy in all forms. Any other suggestions? I would reaaly like something low carb for my coffee. |

I don't do soy either ... I tried to find a whey protein that wd go into coffee, to no avail.
I finally just learned to love my coffee black. I buy really great organic fresh-roasted beans, grind them myself, and use a french-press to make a great, strong brew. I add a little cold filtered water to my cup so that I can drink it right away. I never thought I could give up milk in my coffee. But I did. cheers, Wendy |

I think you can have coconut milk--I guess you have to read the labels for any additives. But coconut milk is a sub. for cream. I think you will have to get used to coconut flavored coffee though!

Yes! Coconut milk is a great idea! I find it to have a nice, mild and nutty flavor. I think that might do the trick for you.
I didn't even think about soy in almond milk! Geez, it's everywhere! |

Ack, I didn't realize about the soy lecithin.
Here is a recipe of almond milk: Almond Milk limlom, it rhymes with '.com' Almond milk (depending on how you make it) isn't as rich as coconut milk so it is more like a milk (whereas coconut milk makes a good cream). |

My mom was diagnosed with celiac about 15 years ago. I don't know if I understand this quite right, but she was also milk intolerant, but after several months on a gluten free diet, she was able to tolerate milk products again. At least that's what she told me.
I am gluten sensitive, where I get stomach aches, and joint pain when I eat gluten. I don't get the gastronomical discomforts most celiacs get. My doctor did some testing on me, and said I tested negative. I've decided to give up gluten anyway, but it's hard for me, as I'm an avid baker. That was why I did a search on it, and found this thread. Like uniquelymade, I need encouragement. |

Some of the Dixie Diner low carb products on Netrition say they are gluten free, but they don't say if they are made in a dedicated facility or on a dedicated line - so they probably aren't. But you could call and ask if you were interested.

I also have celiacs, and I used to be sensitive to dairy. Now, after years of gluten-free low carbing, I can eat fermented dairy products (ie, cheese and cultured butter and good quality sour cream, ie Daisy Brand) without a problem.
I eat grass-fed and wild meats and fish (conventional livestock are fed a high corn and soy diet, and I find that the wild and grass-fed meats are much healthier for me). I eat lots of greens and other low-starch veggies, and lots of nuts. Above all, coconut milk is a life saver--it's delicious and creamy and incredibly good for you. I don't ever eat processed foods--they almost always have something nasty hiding inside. Berries, flax, and eggs are also fine. And so is cocoa or unsweetened chocolate, which opens up a world of homemade treats. Don't despair--protein, eggs, veggies, nuts, olives, flax, coconut, and berries --and tons of herbs--add up to a wonderful and satisfying diet. Last edited by tiva; 10-17-2007 at 07:12 PM.. |

You all have been so sweet to respond to my post. I have decided to start low carbing!
It's been a while but I feel like that is what my body is saying to do. Not only can I not have wheat, Gluten, barley, rye, soy and dairy but I am also reacting to corn! I went to the health food market today and purchased some organic veggies and apples, almond butter, nuts, and meats. I am going to try full fat cream in my coffee and see how my body reacts to it. I also bought some coconut oil. I think that it would be healing for my tummy. Wish me well, Yvonne |

When I was diagnosed with Celiac seven years ago, I was also allergic to many other things (and I have HIE...Hyper IgE Syndrome, and have since taken Xolair injections for it...helped a little bit too)...and I couldn't tolerate dairy in certain forms.
Now, seven years later, I can have some steel cut oats (there are a couple of places I can get them where that's the ONLY product milled), I can now tolerate a little cream in my coffee, and I can use whey protein powder (I buy vanilla flavored, mix with hot water, leave in fridge and use as vanilla coffee cream). I still cannot eat corn, wheat, barley, and I can't have soy in ANY form (my body knows right away if I get soy...I get hives and my lips swell, and it's hard to breath). I think my small intestine has healed a bit now...I feel much more comfotable and can tolerate my oats a couple times a week. Pam
