Gluten Free Low Carb
I can't believe all of the stuff that has gluten in it. Even my beloved Hidden Valley Ranch Salad Dressing.
After months and months of misery, I finally got what I consider a definitive diagnosis from a lab that I have dietary gluten sensitivity resulting in an associated autoimmune reaction to the human enzyme tissue transglutaminase. Pam? Anyone? I'm in need of your make-ahead ideas! |

i've wondered if i have a gluten sensitivity. how did you find out? did you have to request that the test be done?
i had considered giving up all gluten for a few months and seeing if i felt a difference. |

My new wonderful doctor tested me with the blood tests and those came back negative but I noticed that every time I ate wheat/gluten I had pain and swelling in my joints as well as brain fog.
I antied up the money and used www.enterolab.com testing (stool) which is supposed to be more sensitive than the serum testing (although not really recognized by the traditional medical community). |

My diagnosis came from the "Gold Standard"...a biopsy of the small intestine. Anyway, I don't have much trouble...as long as I make everything myself, lol. Down to even growing all my veggies in my own organic garden this past summer (and I'm really tired of freezing AND canning!!).
I don't use a lot of "prepared" foods, plain and simple, and I'm sorry I can't tell ya better news, but that's how it is. Depends on how sensitive you are....I am sensitive with the high IgE, therefore if I eat gluten then I get to not be able to breath (like an asthma attack times three). That's quite a deterrant from eating it. I think frenchmaid is also Celiac and reactive...you might pm her, ask her about it, she has some really great advice, cuz I'm sure you aren't as allergic as I am....and can possibly eat some things that I cannot. Are there any good websites re: how to live a gluten free lifestyle? I'm a full-time single working mom...no time or money to get tests done. However, I do believe I have a gluten intolerance/sensitivity, and I would LOVE to learn more!

I don't know why someone would give up ALL glutens (some aren't as volatile to a sensitive individual versus autoimmune Celiac Sprue, which is what I have) unless they have been diagnosed with the condition. I would just tell you to start by giving up all wheat, barley, grains, (I can't eat oats, either, or most types of cream cheese....cassein bothers a lot of folks with gluten sensitivity). That alone might do the trick for you.
I just avoid all glutens (wheat, grains, cassein, MSG, etc.). If you would like a list of everything with gluten in it (I do believe there are over 4000 foods on it) then go to delphi forums dot com and look for the Celiac Disease forum. They even have lists of medicines with no glutens, and how to separate YOUR part of the kitchen and utensils/cookware for isolation. Pam |
