Chronicling my journey into the world of low carb in a quest to lose 100 lbs in one year. I have Dr. Atkins New Diet Revolution as my guide, this lowcarb friends forum for information, and the formidable trio of desperation, determination, and disgust giving me the swift kick in the rear that I need to get started.

Week 1 - Day 4

Posted 03-17-2008 at 05:37 AM by Whitney_Piers
It's Day 4, my first high carb, high calorie day.

I woke at 7 this morning and the crockpot was filled with creamy oatmeal to which I'll be adding 1/4 c fresh blueberries. It's been a long time since I had either. I was going to add some whipping cream, but that'd be overkill since it doesn't need it.

What I did add into the mix was mindful eating. After watching Paul McKenna's show last night I plan to follow the 4 golden rules as they apply to low carb. I was pleasantly surprised last night to realize that my most favorite foods aren't junk food anymore but cream cheese, whipping cream, grapes, cherries, ground beef. Maybe that's one of the benefits of staying on plan for 163 days. Most of my cravings have disappeared, and forbidden foods like fruit, beans, a slice of bread, a wrap, even a slice of pizza can now be eaten in moderation.

The 4 golden rules:
1. When you're hungry; eat!
2. Eat what you want.
3. Eat consciously, lay utensils down & chew 20 times.
4. When you're full; stop!

Menu:

Meal 1 - 1 cup of Oatmeal with 1/4 c blueberries. (Divided into 2)
Meal 2 - Cottage Cheese Cereal
Meal 3 - 6" Tortilla wrap with chicken, tomato, cucumber, gr. onions, ranch dsg, grated cheese.
Meal 4 - Oatmeal & blueberries
Meal 5 - 6" tortilla wrap with ground beef and veggies.
Meal 6 - Cottage Cheese Cereal

The last time I had oatmeal I ate it smothered in brown sugar and covered with milk. This morning it had only a sprinkling of blueberries on top and it was delicious.
