Sweet Curry Chicken Salad

As I mentioned in a post on this week's South Beach check-in thread, I needed a savory, protein-based topping for a sweet potato to take to church today for our Potato Bar meal. After several excellent suggestions from my friends on the message board, I decided to try a recipe that I like on sandwiches (whole wheat toasted bread, pitas or tortillas are great with it) and as a salad on a bed of mixed greens. (It's great with Ritz crackers, too, but that's not SB-friendly; maybe on Wheat Thins or Triscuits instead?)

Anyway, here's the recipe:

Vegetarian "Spaghetti"

Here's a recipe that I've been enjoying for the past couple of days:

1 medium spaghetti squash
1 large can of tomato puree
dash of olive oil
Italian seasoning to taste
1 12 oz. bag vegetarian crumbles (found in the frozen food section of the grocery store with the vegetarian burgers, chicken patties, etc.)
Shredded parmesan cheese

Preheat the oven to 400 degrees F and line a roasting pan with aluminum foil. Cut the squash in half lengthwise and use a spoon to scoop out the seeds and seed pulp. If you're a gardener, set the seeds...

Huevos Rancheros Casserole

This recipe was a hit at church last night; not a bite left to take home. So, here it is:

2 cans black beans (I used Goya)
1 pkg. (2 cups) low-fat shredded Mexican cheese blend (I used the Kraft 2% Four Cheese Mexican blend)
12 eggs
Chili powder, cumin, garlic powder and black pepper to taste

Preheat the oven to 400 degrees Fahrenheit. Spray a 9" x 13" casserole dish with non-stick cooking spray, then wipe with a paper towel to absorb any excess. Puree the beans (juice and all) in a blender or food processor (one can at a time if...

Almond Flour recipes for Phases 2 and 3 of the SBD

I posted a couple of recipes on last week's SB check-in thread, and I'm putting them up again here so they'll be available to anyone who wants them:

Traci B's Almond Flour Semisweet Chocolate Chip Cookies

2 1/4 c. almond flour
1 t. baking soda
Scant 1 t. sea salt
1/2 cup Smart Balance spread and1 stick butter OR 1 cup Smart Balance spread
1 c. granulated Splenda
1/8 c. brown sugar (optional, for that brown sugar flavor you can't get any other way)
2 eggs
1 t. vanilla

After posting several recipes to the South Beach check-in thread last week, I decided it might be better to post them in a blog and link to it, so I'm starting my blog today. I can't promise I'll be daily with my posts, but I will try to be entertaining and/or informative (preferably both! ).
