Feeling Cheerful :)

It always amazes me how, after I've been back on low carbing for even just a few days, my mood really becomes so much more balanced and calm. I feel like I've done a total turnaround from where I was a few days ago, before coming back to LCing. I'm so relieved!
I sent out a few resumes yesterday, which I feel good about. Today I found an interesting opportunity for a freelance writer online. I'm not sure I can qualify for it (the only kind of writing I've done is my own fiction writing and plenty of writing for my classes in grad school
) but I might just send a few samples and see what they say. It would be a great opportunity to get some experience freelance writing which might lead to other things in the future.
Today's Menu:
Morning: Tofu scramble with red pepper and salsa; coffee with organic cream
Mid-Morning: Protein shake
Afternoon: veggie crumble with swiss cheese, mushrooms, onion, sour cream and mustard (yum!); roasted cauliflower (double yum!)
Evening: Greek salad; Fiber One cereal (not super low carb but it still fits into my 50-60 carb/day goal and it gives me something "carby" to munch on with a ton of fiber); homemade sugar free peanut butter chocolate fudge
Exercise: Leslie Sansone 3 fast mile walk with walk belt; no yoga
