No Vegetarian Induction For Me Today :(

I was all set to begin a vegetarian version of induction today in an attempt to get my blood sugar levels normal again but yesterday I hit a snag. It was totally my fault. I was trying to do a "detox" of eating only veggies, low GI fruit, and some nuts for five days to try and clean out some of the junk food I've been having the past week (weeks!) and I should have known it was a rotten idea. Of course I started to get headaches in the afternoon and, as usual, I over-medicated and that resulted in a massive migraine. So I kept taking pills throughout the night which made me queasy and I slept in late, which made it impossible for me to get to the grocery store to buy the induction foods I need (mostly cheeses). I'm afraid to get out on the road since I still have the migraine (much better, though).

I am going to eat low carb veggie today, but just not induction. My planned menu:

Morning: veggie burger sauted with onion and zucchini and a dash of apple cider vinegar - tea or coffee
Mid-Morning: Protein shake
Afternoon: veggie crumble and cheese sauted with some onion and probably some salsa (I can get small amounts of cheese at the local 7-11 which will hold me for today until I can drive down to the store tomorrow) - side of steamed veggies
Mid-afternoon: cheese stick and 1/2 oz nuts
Evening: Big salad with vinigarette and cheese and low sugar fudge made from ground almonds, peanut butter, cocoa powder, a little coconut oil and a little sweetener for dessert

Here's my planned basic menu for induction:
Morning: 2 eggs with 1 oz cheese and a little veggies - coffee with cream
Mid-Morning: veggie burger or veggie sausages in a lettuce wrap with mustard and/or mayo
Afternoon: veggie crumble and tofu sauted with a little veggies and 1 oz cheese
Mid-afternoon: 1 oz cheese and 1/2 oz nuts
Evening: Big salad with 1 oz cheese and sugar free fudge

I should mention that my induction is a bit modified, as I'm adding 1 oz nuts per day to give me a little more protein variety since I'm a vegetarian. But the carb count is around 20-25 gr a day. I'm really hoping I can get a boost of energy and well being as well as some weight loss to keep me on track for low carbing, since I've found it so difficult to get back to LCing as a vegetarian (had no problem as a meat-eater several years ago...)

I do want to blog here every day for accountability and for (hopefully) support!
