Almost done with Week 5 - Whoohoo!

Must say I'm in a good mood today
. I've been lowcarbing for 5 weeks now and I'm back to being myself. Except for that one terrible week (and the rash is clearing up as well as the headaches) and that one binge weekend, I'm doing well, in terms of mood, health, and food addictions. I'm not losing weight/inches quickly, but as I mentioned before, my primary goal was to get out of the binge eating cycle and get some balance back into my body and this is exactly what's happened. I'm glad that I didn't have to go down to induction-level carbs to do it, as I think, as a vegetarian, that would have been really tough.
Other things going on well in my life too. I finally got in the transcripts for my MA (took 3 days - the university is 20 minutes away from me, sheesh!!!) but they're here so I can fax them off to the online college that asked for them today. I'm excited about this because I took another look at the email the woman sent me requesting them and she specifically mentions that after they review them them "might" be able to schedule me for the next faculty training. To me, that translates into the fact that they are in need of someone to teach the kind of classes that I do and need them pretty much immediately and if my transcripts are legit and check out ok (which they do) then I might get the ball rolling pretty quickly. The ideal for me would be to do the training and then be able to pick up a couple of courses by June or July, as that, along with the few courses I already am down for with the other college, will give me a full-time schedule and a full-time pay at least for a few months and that's just about the time my student loans start kicking in and I'll really need that extra money. So I'll keep my fingers crossed!
Yesterday's menu:
Egg salad made of 1 egg and 1 egg white, mayo, sour cream, dash of mustard, stuffed in a few celery ribs (since the weather has become so hot, I've been doing this more often and it's great)
1 cup plain yogurt with SF maple syrup and xylitol and 1/2 cup Fiber One
Coffee with half-and-half
Veggie crumble sauted in olive oil with red onion, garlic, spinach, mushrooms in a sesame seed butter/tomato paste/lime juice sauce (delicious!)
Salad with feta cheese and nondairy lowcarb fudge
Water 14 glasses
Exercise: upper and lower body pilates workout, pilates flexibility workout (30 minutes total)
110 minutes walking (long walk today)
