It's getting late...

but I wanted to check in. The last two days has been a success so far. I've stayed on Plan or, as I call it, "OP"...and my cooking has been easy and wonderful. Last night my lasagna was P-E-R-F-E-C-T (or so DA says) and when I served him the cauliflower casserole tonight along with the London Broil, he said that with that dish, he wouldn't worry about needing potatoes and wouldn't change a thing. (Thanks Linda Sue - you're making this transitition to cooking for a non-LC'er so much more easier!
).
I used the Loaded Potato Casserole recipe, making a change by creamikng the cauliflower with neufchatel cheese first, adding in the scallions, bacon and 1/2 shredded cheese ( I used the finely shredded reduced fat cheddar/mont. jack in the recipe and the other half went on top for browning in last 10 minutes). The london broil came out okay although it's done more well than I like - slight problem with DA's broiler made it hard to tell when it would be done - not used to gas since have had only electric for the past 14 years. All in all, things are going well.
I called on the gym VIP passes today and was told to come by any time prior to 8pm (when their sales reps are in). So am heading there first thing in the morning to get back on track with the workouts. They also have an indoor pool (no children allowed) for doing laps and a "sun deck" where you can lay out (enclosed in glass but still...you're not out in the open!).
Da called me this afternoon and told me that the new dinig set will be delivered tomorrow - they'll call him in the morning and let him know what time. WOOHOO! Now if I can only get in the bar we ordered, I'll be set as I can transfer the "bar" that is in the kitchen cabinet and have room for the rest of my bowls, etc. from my house. Since he works just across the street from here, he can meet them if I am working out.
That's about it for now. Tomorrow afternoon I have the last of the laundry to do and dinner is leftover lasagne. Am taking the final 2 servings and putting them into the freezer for that night of "not enough time to make dinner and need one in a pinch". We all have those and it's cheaper to find something in-house. After all, I still don't have a job.
And speaking of jobs.. I realized today that I have not yet received even an acknowledgment of those resumes that I have sent out over hte past week (6 in all) so, in the spirit of sarcasm and after having two glasses of wine (no more wine as of next week when back on Induction but this week is my "tapering week" if you'll remember), I wrote a "cover letter" that was probably not really realistic, considering the fact that these companies get inundated with responses to thir job postings, probably. However, I felt better after I wrote it and that was all that counted!
Not gonna send it out, of course, but it did help me sit back and view objectively some of my credentiasls that led to a new and improved (and more concise) resume so that was a good thing!
That's about all for tonight. Da might have to hop onto a 10:"30pm conference call with their Australian contractor and I'm going to take this opportunity to hop into the shower before hitting Da....errrr... I mean...the Sack....with DA...errr, you know what I mean.
Looking forward to Wednesday and what the day will bring. Am fast looking ahead and realizing that I might just have to stick with a PI firm in order to get the money started coming in..then maybe I can regroup into another field and/or administrative or Executive assistant position that is outside the legal industry. However, if I find a place that I can consider to be a new "Home", then I'll be just as happy, even if it IS in PI. Does that make sense? I'll probably re-review this last sentence many times (but I promise not to change it...I want these thoughts to be in "real time", and not thought out.
Time to jump in the shower - I'm ready. Might just fall into a deep sleep shortly thereafter..nothing like crawling between clean sheets after a long shower or bath.
