ME is my word for today. concentrate on ME.

I am so frustrated lately. I'm desperate to find ME again. I know that sounds wierd and I don't know how to explain it but I remember who I was just a year ago and I want to Feel that way again. I can't seem to find that person now.

I want the confidence and the control that I had then. I want the drive and the motivation I had then. I want the body I had then . (uh, if I had the other things the body and confidence would be there, lol).

Vegetarian "Spaghetti"

Here's a recipe that I've been enjoying for the past couple of days:

1 medium spaghetti squash
1 large can of tomato puree
dash of olive oil
Italian seasoning to taste
1 12 oz. bag vegetarian crumbles (found in the frozen food section of the grocery store with the vegetarian burgers, chicken patties, etc.)
Shredded parmesan cheese

Preheat the oven to 400 degrees F and line a roasting pan with aluminum foil. Cut the squash in half lengthwise and use a spoon to scoop out the seeds and seed pulp. If you're a gardener, set the seeds...

Easy Cheesy Chili Chicken...

2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh cilantro leaves, plus a few whole leaves for garnish
1 tablespoon chili powder
1 tablespoon ground cumin
2 teaspoons kosher salt
1 garlic clove, chopped
1/2 teaspoon freshly ground pepper
1/8 teaspoon cayenne pepper
2 pounds boneless, skinless chicken breast (about 4 halves)
1/4 cup julienned green bell pepper
2 tablespoons diced red onion
1 medium plum tomato, cored and diced (about 1/4 cup)
4 ounces shredded Colby Jack cheese

freezing!

OH it is so cold in here, not wanting to turn on the heat and i am tired so I am just turn in for the night.
We are at 40% on our tank from last yr and dont want to spend the money to add yet expensive for gas heat

Menu for the day

B: Egg Cream
three eggs
6 cup coffee
scoup c/o
splenda mocha


L: half cup ground beef
three tbsp salsa
one tbsp sour cream
two cups ish iceburg lettuce
