Doing good

Today I have had about 15 carbs, my blood sugar 1.5 hours after dinner was 99, tried a new recipe and loved it, walked around at lunch, and have downed 108 ounces of water. Doing Good!!

The recipe was breakfast muffins:
16 ounces cream cheese softened
1/2 cup Splenda
2 eggs lightly stirred
1/2 tsp vanilla extract

Mix all ingredients well with a mixer. Makes 12 muffins. Use paper muffin pan liners and bake at 375 for 20 minutes. 1.5 - 2 carbs each. Very yummy. Can also sprinkle the tops with cinnamon, but I just made mine...

Co-Worker Envy, Sabotage or Both???

I am so proud of myself. A co-worker who has already questioned what I am eating -- what I am doing -- and how much weight have I lost, really showed her true colors today. She came by my office with homemade cheese biscuits (steaming hot)-- and offered me one. Then she giggled, took a big bite and said (around the bread in her mouth) -- 'oh yeah, you're on the low carb crap. poor you' -- I just said 'thanks, but no thanks' and kept working. Was not worth wasting my breath on her. Then this afternoon, she came back by my office with chocolate chip cookies. ... sat down next to my desk...

Thursday's Journey

Today has been a good day.. started out with the scale showing me I have lost another pound.... so I know that some say you should not be a slave to the scale... and I understand that because it can be a downer when you climb on and see a weight gain or time after time stay the same... but I so enjoy getting on and jumping for Joy when I see that all my efforts have paid off and I have lost some weight. So I admit I do weigh myself every weekday morning... on weekends however I don't peak because my mind can try to play tricks on me. For example, my husband will say "let's go out...
