Frustrated...Not Losing...What the Heck!!!

Good Morning,

I'm upset today... My exhusband and I got into a debate last night. I was frustrated about not losing weight and we were discussing it. He said, well you eat a lot of food....wth!!! Now of course, I was surprised by this statement since I have been documenting all of my food in Fitday for the past week and a half...

I informed him that I have been documenting my food in Fitday because I thought the same thing, but have found out that I am not even getting my food intake up to 1200 calories...so it is less than that most days...around 1000...

Brownie Muffins...

Here is the muffin recipe:

1/4c butter
1/4c semisweet chips
1 egg
1/4 t vannilla
1/4c. flour
1/4 pecans

in micro-wave, melt butter and chips, stir until smooth. Cool slightly.
In a mixing bowl, beat egg and sugar, stir in vanilla and chocolate mixture, gradually add in flour to choclate mixture and fold in peacans.
fill paper cups 2/3 full...bake at 325 for 20-25 min. , makes four.

I ended up increasing my oven to 350 degrees, they wouldn't cook at 325...I also used a silicone muffin pan and sprayed with pam. Maybe...

Cream Cheese Pancakes...

Here you go for those that asked. It's WONDERFUL!
When I made them this morning I didn't use the Cinnamon. Also, if you don't use the cinnamon or Splenda you can make savory ones - I did ham and cheese and the Splenda was light so it wasn't too sweet - but I imagine no Splenda and using for low carb enchiladas or seafood crepes with crab, shrimp, heavy cream, mozzarella cheese, parmesan and cream cheese and herbs! YUM!

Easy to make, and totally induction friendly ... AND THEY ARE GOOD !

4 oz cream cheese, softened
4 eggs
4 tsp Splenda
dash of...

Back in line after some rough IF days

It feels so good to be back to doing what feels right to me after getting a bit sloppy with my eating and getting a bit freaked out by seeing the scale move up. The last 2 days I've gone back to a pattern of eating a fairly big lunch and then having 2 light snacks thru out the afternoon with a noon to 4 window yesterday and noon to 5 today. I felt more satiated than when I was doing grazing eating and that IF boost in energy and fasters' euphoria has returned and I do love that feeling. I am doing a little experimenting with stabilizing my blood sugar readings to see what might help. I went...
