Celiac research

So, as you may know, I was recently diagnosed with Celiacs disease... with a leaky gut. The leaky gut is because I went for so long without knowing I was born with an intolerance to gluten, and I don't make the enzyme analyse(sp?). That leaves my small intestine all messed up and it is now porous and food "leaks" into my gut ~ YUK!

No one ever tested me before for this because it's considered a wasting disease, where you usually can't keep weight on (like cancer)... and I've always been chunky if not just fat. Through my research I've found that about 20% of celiacs are overweight and constipated rather than underweight w/diarrhea.

I've been trying to figure out what's been wrong with me... I've had so many smallish symptoms that just keep getting worse every year. A small list:
constant nausea
vertigo
bloating/swolling: belly, joints, tongue, and feet
headaches and ringing in the ears
irregular cycles
weight gain
abdominal tenderness, pain, and burning
low low back chronic pain/burn
heartburn with acid reflux and vomiting
irritable bowel syndrome
anemia
congestion
gall stones, kidney stones
super tired and exhausted ALL the time
wake with whole body aching thru the night
frequent urination
high blood pressure
high triglycerides

I'm glad I went to a naturopath who was willing to really look at these symptoms and to think to take LOTS of tests. From everything I've been reading, cutting gluten could mean a whole new life for myself and I am thrilled with the idea that I could feel SO MUCH BETTER without it.

Of course cutting the carbs out of my diet a few weeks ago REALLY helped in reducing the amount of gluten, but now I have to make sure that nothing I eat has it. This makes all things with wheat, barley, rye, and oat (and all their products) out of the question for me.

I've noticed that even if foods are low-carb, they sometimes still have gluten in them... so I'm gonna have to do a lot of food research. I hope I can find some good books out there ~ maybe a food list book to help me buy stuff at the store.
