Gluten Allergy

So I'm starting week three today! Going pretty good.
Went to the doctor yesterday, and got my GI tract test results and found out everything is fine except for the fact that I was born with an allergy to gluten. It could be the reason for all my "minor symptoms". The doctor was impressed that I cut sugar and carbs from my diet ~ they would have had me cut all gluten anyway... but they think I should eat more veggies because my keytones were high. I was happy to hear that though, because everything I've read about low carb dieting says that when keytones are present you are burning more fat! The Doc also said I could have other grains like amaranth and quinoa ~ which I like, but according to my carb count book ~ those grains have some of the highest carb counts out there! So I'm going to avoid them for a while anyway.
So now I'm planning some research into low carb dieting and gluten intolerance. We'll see how that goes. I've also been asked to keep a diet diary for the doctor. Should help me get organized and really see exactly how much carbs/fat/protein I'm actually getting.
