to the beach

So I'm back...
I went to the beach this weekend with my daughter and 7 of her friends for her 18th birthday. I ended up cheating a little... I baked her favorite cake and made frosting, and while I was frosting the cake, I had to taste some. Probably more than just a taste....

Oh well, I started back up on the diet again yesterday and did very well with about 25 carbs total... even while at the beach on vacation!

I haven't lost as much as others seem to ~ but that is always the case, I must be one of those "hard to lose weight" people... totally sucks. But I am down a few pounds, and that's better than normal.

I'm going to the doctor's today to get some test results back. My doc is an ND/MD and I have a feeling this diet will not be recommended by him. We'll see. I've decided to eat this way regardless of what he says... at least for 3 months. Then I'll do another round of blood tests and see if it made any difference.

I've been craving sweets too ~ a lot! I keep looking online for good low-carb recipes, but everyone writing recipes for low carb don't seem to use anything but artificial sweetners. I know there is Stevia powder out there ~ why aren't these recipes using Stevia (natural herb) rather than man-made artificial stuff that could hurt you in other ways?
Is there a low-carb Stevia site out there where I can get some good sweet recipes? Or will have to play mad scientist in the kitchen and make my own?

Hey pchick...I know you wrote this a while back but I have been on vacation and am just getting caught up with my blog reading . I use stevia (in the form of Truvia) but I find that it works best on fresh foods (like sprinkled on fruit) and that when it is heated, it can become a little bitter. Most of the recipes that I see using it do so in conjunction with other sweeteners. A really good website for sweets and desserts using natural ingredients and also low in gluten is: healthyindulgences.blogspot.com Check it out!
