Homemade Taco Seasoning

forget those salty packets...

2T each of cumin, garlic powder
2 tsp cocoa powder
4T chili powder
1T smoked paprika
salt to your preference

lots and lots of hot seasoning
pinch of xanthan gum


add all this to your taco skillet.
1.5 lb of ground protein
1 large onion minced
1/2 each of red & green pepper, chopped small.
1 sm can of tomato sauce

there ya go...

weight 174lb even.

have finally killed the sweet tooth.
that took some doing.

got creative with a can of anchovies, yesterday.
i love salty food and anchovies help that..
can't taste the fish taste, just gives a salty flavour and adds calcium to the dish.

96 here yesterday.
same today, i believe.
what i wouldn't give to get out on my bike and cruise the beach today.. but alas, i must work for a living..
need to get to the store for more protein.
down to sausage and pork belly.

Anchovy Mayonnaise

1 egg
dash of dry mustard
1/2 juiced lime

1c oil
anchovies (3)
1 garlic clove



egg, mustard, lime juice in bowl and froth with immersion blender.
after about 30 seconds, add 2 drops of oil and blend for 20 seconds.
add another 2 drops of oil and blend for 20 seconds.

now add the rest of the oil until thickened mayonnaise.
after thickened, add anchovies and garlic clove.
blend.

chill.

Sweet Tomato Salad Dressing

1 whole egg
dash dry mustard
1 garlic clove
2 anchovies
2 plum tomatoes cut into little pieces
1 c oil
4 drops of stevia
juice of one lime

beat with an immersion blender and chill...
this will not be the consistency of mayonnaise.
this will be a creamy salad dressing.
good on cold slaw
lettuce
drizzle on sliced tomatoes, chilled asparagus, dip artichoke leaves in it...



if you wish to have this thicker, blend in some homemade mayonnaise.
