Tomorrow is the SUPER BOWL and we are having the party .... I cooked ahead today to have the bulk of it ready, and we will have LEFTOVERS ALL WEEK!!! We love party food ...
* Banana Flax Meal Bread http://www.bobsredmill.com/recipe/detail.php?rid=809 I couldn't find my second loaf pan, (thank you kids for cleaning the kitchen for me
) So when doubling this recipe I used my white Pyrex bowl as well as a loaf pan (the bowl baked for a longer time). I had DEAD, DEAD, DEAD bananas so I doubled up on that ingredient. I also added a few handfuls of freezer blueberries. Yes, I used SUGAR in this recipe as Dr. Lang is encouraging me to cut out SPLENDA, she would rather I use sugar than splenda! I used up the rest of my Smokey Mtn Stone Ground Wheat Flour ... so sad. I need to add that to my Grocery List. I will serve this bread at the party with a spread (butter, cream cheese and real maple syrup) and the kids will gobble down all the flax meal goodness! I have both loaves wrapped in plastic wrap on my counter to "meld" overnight.
* LindaSue's Potsticker Patties http://www.genaw.com/lowcarb/pot_sticker_patties.html Yup, these are INDUCTION FRIENDLY and OMG are they ever good!!!! This recipe is a keeper ... I am still on the HUNT for the best dumpling dipping sauce (I have real Soy Sauce, Sweetened Vinegar, Sesame Oil, Hot Sauce and Chinese Mustard ... so I will come up with something good). The kids had a few of these with their dinner last night. I made the patties small in order to have an appetizer feel ... and I used three pounds of meat (2# gd pork and 1# gd chicken). These are low in fat, high in protein and nutrition. These will be a HIT!
* LindaSue's Meatloaf http://www.genaw.com/lowcarb/meatloaf.html I doubled this recipe using 1# gd beef, 1# gd turkey, 2# gd pork (I found gd pork on sale this morning at MEIJER). I used three MINI LOAF FOIL PANS for the family to eat during the week while I am working late. I dont' really care for Meatloaf myself ... I put one MINI LOAF pan, after baked and cooled in a QUART SIZED ZIPPIE and tossed it in the fridge. I put the other TWO also in INDIVIDUAL QUART SIZED ZIPPIE, then in a GALLON FREEZER ZIPPIE ... added a label... and tossed them in the deep freeze for future use. I let these cool on the counter, then had to pour out the grease before wrapping them up.I only used half the recipe on the mini loafs: The rest of the recipe I balled up (I use my hands, so they are not very uniform or pretty!) and baked as meatballs. I will serve these meatballs at the party ... with a ketchup / BBQ sauce.
* PAPA MURPHY'S CHICKEN BACON ARTICHOKE deLITE PIZZA will be baked and cut into little squares. http://www.papamurphys.com/public/me...nformation.cfm WOW! Do I ever love this pizza ... go try it!
*STUFFED STRAWBERRIES (my recipe) On a cutting board put rinsed and dried strawberries on their crowns (do not remove stem). Cut 3/4 way to the crown, then turn berry 180 degrees and cut again (making an X cut). Place strawberries on their crowns on serving dish. Meanwhile, mix in a separate bowl 1/2 block of cream cheese, 4 TBSP of Splenda (or maple syrup) and mix until smooth. Put in a piping bag with tip of choice, and pipe cream cheese mixture into the berry cavity. I have used DAVINCI syrups to sweeten the cream cheese in the past ... great time to get creative. These little LC gems look so elegant and are so good for you!

* FRUIT TRAY (green grapes, red graps, cantaloupe, pineapple)
I also today went to SAM'S CLUB and bought:
*KETTLE FRIED CHICKEN WINGS, never tried them before but buddies around here RAVED about them. They are a great price at Sam's!
*TYSON'S LIME TEQUILA WINGS, which are my favorite wings ever!!!! I only can find them at Sam's!
*SPRING SALAD MIX for $4!!! I buy this every week ... I can almost use it up by Friday for lunches ... so much lettuce! And my brown bag lunches look so gourmet ... my co-workers are jealous! I make a lot of my own salad dressings, as I am Soy Intolerant and soybean oil tends to show itself in EVERY MASS PRODUCED salad dressing, because it is so cheap!
Okay, now I gotta go tackle all the dishes ...
