After a few rough days, I'm back on the horse! I never went nuts with carbs, just calories, cheese, and artificial sweetners! Yesterday was a good day. I went for a 30 minute walk. Today I am cleaning and doing school work. Here's my menu:

B: French Toast: 1 oopsie waffle (=1 egg, 1 oz cream cheese) w/ 1 egg, DaVincis, cinnamon, 1 tbsp butter; 1 cup cucumber, 1/2 loaf flax bread w/ 1 tsp peanut butter, 16 oz herbal tea w/ DaVincis, 16 oz water
L: chicken thigh and leg w/ skin, 1 oz cheese, 1 cup red cabbage
S: 12 oz herbal tea w/ 1 tsp fibersure and DaVincis, 1 oz cheese, 1/4 loaf flax bread, 32 oz water
D: salmon fillet, 1 cup broccoli w/ 1 tbsp parmesean, 1/4 loaf flax bread w/ macadamia nut butter, 3 tbsp lemon juice w/ 1 splenda and 8 oz water, 1 tsp peanut butter
S: 3 tbsp sf chocolate syrup, few peanuts, 1 tsp macadamia nut butter, 1 tsp peanut butter, 1 oz cheese, 2 thin slices turkey

Totals: 88 oz water, 1850 calories, 60% fat

So I followed one of Cleo's recipes for flax crackers, and made it into a bready loaf. Basically I mix 5 tbsp ground flax with 5 tbsp water and a dash of salt. I spread the mix into a circle on a sheet of parchment paper and microwave it for 4:00 for crusty bread and 3:30 for softer bread. I break the loaf into quarters, and eat it over the course of the day. Lots of calories, but lots of fiber. It is great tasting too... with butter or peanut butter! yum-o
