What's your latest success "experiment in the kitchen"?

Part of success is not getting bored! ! !
I've been looking for something other than eggs for breakfast that I can count on.
So I keep playing with my food...finding joy in the kitchen!
I was delighted with an experiment that triggered me after seeing a "chicken pizza crust" made into bread sticks on a site that I can't link to here.
So I used 4oz. cooked chicken breast and 2oz. Mozzarella Cheese and some of my preferred spices(onion, garlic, Italian)
...whizzed it all in the food processor till it was all the same 'groundness'...about a minute.
Then spread/pressed it all evenly in a non stick 10" pan and put on the lid...
...set the temp a little less than the middle # on my stove nob...
...set the timer for 4 mins... and waited.
Waiting is hard!!!!
When the timer went off, I thought It would all be fried together, but not so.
It was however nice and brown...so I flipped it over in sections and browned the other side...for a couple minutes.
Then I poured it onto my breakfast plate...scooped out 2 Tbsp of Reduced Sugar Ketchup on the side....
I believe I have a new favorite for breakfast!

I just cooked up some onions and mushrooms in butter. Then cooked a fabulous juicy burger. Made a salad of lettuce and fresh tomato slices, I placed the burger on it and then the mushrooms and topped it with feta cheese. Placed a small amount of mayo on the side. Oh my I love my diet!

Love the BIG salads with lettuce, spinach, shredded cheese + Ranch dsg.

LOL That sounds like what we have planned for dinner tonight... big green salad (mixed greens, cuke, tomato, peppers, calamata olives, feta and my own vinaigrette dressing, a big juicy burger with a generous heaping of sautéed mushrooms. DH will most likely have cheese on his burger. I'll add reduced sugar ketchup, sf relish and a spicy mustard to mine. Strawberries for dessert.

New to this board

Hi! I'm new to this board - I thought it would be much busier than it is!

My new thing that I've experimented with are zucchini noodles, made with a spiralizer. I sauted up a pile of "noodles" in olive oil with fresh basil, mushrooms, and Parmesan. Awesome!

I've been on Atkins since 2007, and lost almost 100 pounds before I started a new med that actually put 40 of those pounds back on. I'm off the med, and losing again!

Spring/summer has found me traveling...
It is scarey when the 'changes' happen to us...ie, new meds!
If you have been successful before, you will be again.
As I have retired this past year and found the change in the physical activity...or should I say the lack of physical activity... has caused me to take counteractive measures to my lifestyle!!!

I think that you will find the board very active, but there are so many different facets of the board, and we all don't go to all of them...just those that capture our interest.

Each time you log on, go to the bar at the top and click on "New Posts"...you will find yourself in so many new...different aspects of our chosen lifestyle!

...gotta run, the car is running and My Loving Spouse is beeping the horn!

Butter, garlic, shrimp, grated zuchini....fry until shrimp is cooked, add parmesan and fresh ground pepper. Shrimp scampi in 5 mins

I have just discovered oven baked fajitas. I can't believe I have never made them before now. They are so much better than a restaurant, IMHO. I use chicken and steak, cut up the onions and peepers, throw in the spices, oil, and rotel, and pop in the oven. You can google this recipe and find many variations. I usually just pick the meat out and I might eat just a tiny bit of the veggies. I also top with sour cream and avocado if I have it.

I know its not really cooking but I mixed a tsp of siracha with mayo and dipped pork rinds in it for a snack. Omg good

Oh yes.... That is the one that was in the news lately because the residents surrounding the factory say that their eyes are burning from the emissions? It must be really hot if it is in the air.
I see in many restaurants now.

Ok, now you've got my curiosity up so I am going to have to try it. I always see it at my favorite Chinese buffet, sitting on a lot of the tables so it must be good. maybe I could try it with their stir-fried or boiled shrimp since the red cocktail sauce is always too carby. They also have steamed chicken which is so bland without any oil but this might jazz it up.
Is the carb count pretty low?

I got mine from a local place and came home with it and 2 zucchini. It is a regular around here now.
I cooked the zucchini spirals in butter/coconut oil and added a bit of onions. It was amazing.
