First day on my own. How did I do?

I started Low Carb eating with my mom last Friday. She came for a visit and showed me how to eat low cab and how to read the nutritional labels. She also showed me recipes for snacks and meals. In the four days she was here I lost 4.5 pounds!

My mom left today and I am now on my own! So, how did I do for my first day?

Breakfast:
Canadian bacon baked with an egg and 1/4 slice of cheese

Snack:
Left over rotisserie chicken

Lunch:
Sausage and egg omelet with cheese crisps (1 slice)

Snack:
1 hard boiled egg and 1 slice of pepper turkey

Dinner:
Parmesean encrusted tilapia (Broiled Tilapia Parmesan Recipe - Allrecipes.com), 1/4 cup steamed spinach, and 1/2 sauteed portabello mushroom in butter and sea salt.

I might have a dessert later with diet Root Beer and heavy cream.

How did I do for my first day on my own?

Thank you. I am trying to stay as far away from 20 carbs as I can!

Today I have had:

Breakfast:
1 hard boiled egg
1 oz of horseradish and chive cheese

Snack:
3 slices of peppered beef jerky

Lunch:
Parmesan coated chicken nuggets dipped in 2 TBS of 1 carb blue cheese dressing
1/2 avocado

I plan on later having pepperoni chips for a snack and bacon cheeseburger sans bread for dinner with a small side salad.

You probably need to add in some non-starchy veggies at some point so you can get the important nutrients in.
