Gaining Weight, lipitor, liquid sweetners

Hi All,
I have been on Atkins in induction for the past year and had lost 170lbs. I have had minor setbacks by eating sugarfree chocolates and ice cream but I always managed to recover from the weight gain and I never had sugar cravings afterward. I recently bought and ice cream maker and made my own low carb cake with slime meal, flax seed, whey protein and liquid sweetners. I also started taking lipitor because my cholesterol is now over 600. Since I used the liquid splenda and lipitor I have been gaining weight everyday despite exercise four days a week and never eating more than 1800 calories a day. Does anyone know what could be causing the weight gain? I went right back to induction foods after having the treat but it took about 5-6 days to stop food cravings. I drink about 120 oz of water per day and I always have.

Stats: lost 130 lb so far, and miles to go before I sleep
WOE: low carb controlled calorie
Start Date: June, 2009
Jenny of Blood Sugar 101 fame mentioned the other day on her blog that statins worsen insulin resistance. that would mean you need more insulin to process the carbs you eat as well as the blood glucose your body makes whether you eat carbs or not.

are you diabetic? what other meds do you take?
