casserole recipes

HI

I am looking for casserole recipes I can use in Phase 1. I am getting tired of ground beef but I love the casserole for work lunches. Last week I used butternut squash and cauliflower and mashed them with butter, mayo, sour cream, laughing cow light swiss cheese and a squeeze of mustard and mixed it all together, was yummy but running out of options.

butternut squash isn't a phase 1 food. summer squash the soft yellow high water content one and zuchnii are the legal induction squashes.

I'm not a casserole person but LindaSue has great recipes as does the recipe section of this place and you might find some great ones in the induction food porn stickie toic in the induction section of the board.

I absolutely love to cook hamburger with things like cabbage, corn, & onions! It is my fav! Also hamburger with zuchinni and corn, really any kind of veggie like that.

This may not really fall into the casserole catagory but at the fair this summer I had what they called a "scotch" egg. They had wrapped raw ground sausage around a peeled hard boiled egg. Then they deep fat fried it. I just cooked it in my skillet and it turned out just fine. There was enough fat from the sausage to cook it if I just turned it. Anyway, good luck and hopefully people will continue to post recipe's.

Like the scotch eggs idea ... but

No corn allowed - a very starchy vegetable that may come back in (in a small quantity) way down the line.

I too love casseroles ... but I have to watch and make sure they don't use too much cheese since that can have some undesired results (sometimes stalling weight loss or cause constipation).

Here's a favorite of mine:

Paula Deen's Hot Chicken Salad

2 cups cubed cooked chicken (I gently poach some boneless chicken breasts in some simmering water for about 10-12 minutes. If you boil or grill them, they can get tough.)
1 cup sliced celery
1 cup mayonnaise
1/2 cup slivered almonds
1/2 tsp salt*
1/2 tsp pepper
2 T lemon juice
1 cup grated sharp cheddar

* Note--I don't think this is enough salt. I use 3/4 tsp. I also add just a tiny blob of Dijon mustard. The taste isn't noticeable, but it zips up the flavor a bit.

Mix all ingredients in a large mixing bowl. Place in a lightly sprayed baking dish. May top with additional grated cheddar, if desired. Bake for 20 minutes at 350 degrees, until bubbly.

This one is delish--portion control can be a challenge! I double it now, so hubby and I can eat the leftovers a few times!

Another good chicken casserole:

Zippy Chicken Casserole

16 oz diced cooked chicken
1/2 cup mayonnaise
2 cups shredded sharp cheddar
2 T dijon mustard
2 T chopped red onion
2 T chopped red bell pepper
2 T chopped parsley (I just used some dried)
8 slices bacon, cooked crisp and crumbled

Mix all ingredients. Place in lightly sprayed casserole and baked at 350 degrees for 20 minutes, until bubbly.

4 servings at 3 carbs each.

This one has a delicious flavor. My husband can knock off the entire pan if I let him. Don't skip the dijon--that's what give it its tang!

Thanks Jessica ... since you mentioned danger re portion control on the first one, I think I'll just do the second one. I have to watch it when something tastes TOO good.

Glad I checked back again, I have found several good sites and have copied 12 pages of casserole recipes, thanks for all the advise.
Casseroles make it so easy to take safe food to work.
I cook on SUnday and take 5 breakfasts and 5 lunches with me on Monday so I have NO excuse :-)
I love the program, still having a mental block about all the fat, but enjoying it all
