Best. Cheesecake. Ever.
Okay so I was making some homemade SF jello and I noticed a yummyyyy recipe on the back of the KNOX box of gelatine. I made it...and I tasted it...and OMG Best LC Cheesecake EVER!
![]() 1 envelope KNOX Unflavored Gelatine 1/2 cup of Splenda 1 cup boiling water 2 8oz packages of cream cheese, softened 1 tsp vanilla extract 1.) Mix gelatine with Splenda in small bowl; add boiling water and stir until completely dissolved, about 5 minutes. 2.) Beat cream cheese and vanilla in large bowl with mixer until smooth; slowly beat in gelatine mixture. 3.) Pour into dish of choice. Refrigerate until firm, about 3 hours. You can cut it as small as you like, I will be cutting mine into 8 servings. The entire recipe has: 1,623 Calories 158.2g Fat 22.9g Carbs 34.2g Protein So 8 servings would be: 202.8 Calories 19.75g Fat 2.86g carbs 4.3g protein *approx. 2 oz of cheese per serving* Enjoy!!!!! ![]()

Hi Steph!
I make this exact thing except I use 1 package of sugar free jello which replaces the Knox and the splenda in this recipe. My favorite flavor of sugar free jello to make cheesecake with is lime... mmmm. I have even served this to non LC family with a dollop of whipped cream and they loved it as well. |

Glad you all love it SO much!!!
I will def. make it with the lime SF jello next time. I have a complex about plain gelatin.. it just smells like this cheap candy that my candy make made when I was a kid. ahaha And key lime pie is my favoriteeee thing ever so I will give that a try! Thanks! |

Try making a small portion first. I tried it last year and it was a bit too jelly-like for my taste. It didn't taste smooth/rich like real cheesecake.

I think I need to add more sweetner of some kind when I make it again. This was quite tart, tolerable, but tart. At least using the lime SF jello.

I dont mean to sound dense.. but how do you do it with the jello? You disolve the jello with hot water, then you beat in cream cheese and let it set? Thanks! |

I enjoyed it! Made it with strawberry jell-o and it turned the most delightful pink color. It has a bit of yogurty taste which people might really enjoy, I'm thinking in the soft form it would be an excellent yogurt substitute
I'm going to make the other flavors, mostly to see how the colors come out. LOL! |

I made this last night using 2 boxes of peach SF jello. That was good. But the 2 boxes made this quite firm. If doing this again, I would pour it into a square pan and cut into squares.

HI
I made this last night with cherry SF jello. Tried it this morning and it is GOOD! My friend came over and I gave her some, she loves it too. I made it in a 8x8 casserole dish but it is not too easy to get out. I think next time I will pour it into cups for individual servings. OHHH I wonder how this would work with a jello base that is set, pour this on top and then whipped cream? Parfait any one? gonna try that next weekend Thanks for the recipe! |
