Hi mrsmordru,

Great idea!! Definitely let us know how it turns out!! That would be a wonderful LC dessert to have for family/holiday dinners!!

I have used the cherry and its as close to cherry topped cheesecake I've tasted so far. Made individual servings and topped with 1/2 a cherry (yeah I didn't want to use up 1 total carb on a whole cherry.......) and easy peasy!!

My favorite flavor of sugar free jello to make cheesecake with is lime... mmmm. I have even served this to non LC family with a dollop of whipped cream and they loved it as well.
I did this as well using the strawberry-kiwi jello.

Wow, that sounds really good.
What is SF jello sweetened with? Does anyone have a package handy to check?

Won't be making it this week or next week but maybe when my husband comes home as a treat.

I made this up today with lemon/lime flavour and it is lovely. I poured it into individual serving bowls and for my guests I shall sprinkle the top with crumbed gingernut cookies, calling it upside down cheesecake.

Thank you!

Great idea. I am ready to make another batch. I may try adding more liquid splenda to see if I can make it a touch sweeter though.

hi

The parfait worked great! I even added some pumpkin to the cream cheese to add some vege carbs. It was great. I used lemon jello, and today I am going to try it with orange jello. You have to add some sugar substitute, but I made 16 servings and it worked out to 3 carbs each.

1 envelope KNOX Unflavored Gelatine
1/2 cup of Splenda
1 cup boiling water
2 8oz packages of cream cheese, softened
1 tsp vanilla extract

1.) Mix gelatine with Splenda in small bowl; add boiling water and stir until completely dissolved, about 5 minutes.

2.) Beat cream cheese and vanilla in large bowl with mixer until smooth; slowly beat in gelatine mixture.

3.) Pour into dish of choice. Refrigerate until firm, about 3 hours.

You can cut it as small as you like, I will be cutting mine into 8 servings.

The entire recipe has:
1,623 Calories
158.2g Fat
22.9g Carbs
34.2g Protein

So 8 servings would be:
202.8 Calories
19.75g Fat
2.86g carbs
4.3g protein
*approx. 2 oz of cheese per serving*

Enjoy!!!!!
I think I might have a good reason to visit the store tonight then .
