I'm going to have to try to make that pizza sometime soon! Maybe I will try it on Sunday. Tonight we had ground beef "enchiladas." I made very thin egg and heavy cream crepe-things, and rolled them up with a little sour cream, onions, and wilted spinach. Topped with a little sauce, cheese, fresh green onions and half an avocado. Not bad at all!

OK, I have a recipe but no pic.
Hubby's started Atkins with me, and today was craving one of the rich, noodle-y dishes he used to make. He IMed me, "I'd kill for carbonara." I replied, "We have bacon thawed... We could pour it over the salmon..." And this, apparently, was the entire inspiration for dinner. 3 6-oz pieces of wild Alaskan salmon, nicely grilled. 1 lb. Trader Joe's "Ends and Pieces" uncured bacon balls, well-cooked. 1 cup broccoli crowns, steamed. SAUCE: Take 1/2 stick of butter (1/4 Cup), about 1/4 c sour cream, and about 2c heavy whipping cream. Stir together in saucepan on low heat. Add Mozzarella cheese (About a cup?) and shredded Parmasean (about 1/2 cup?). Stir on low heat until melted. And 1 TBS chopped onion and 1 tsp minced garlic. Continue to stir for a few minutes, until sauce thickens slightly. Chop up the salmon, bacon, and broccoli. Combine ALL ingredients in large saucepan, stirring together with the sauce. Since he didn't really measure anything, I can't give you a precise carb-count... MOST of the carbs are going to come from the onions, garlic, and broccoli. Had a food-gasm right there in the kitchen. It's all in that sauce... He does "alfredo" style sauces (and variations on them) all the time, but the sour cream just makes this AMAZING! |

Today it's all about the egg. First, egg salad, and then low carb eggs benedict with the easiest Hollandaise sauce ever. Both are induction friendly and really filling. ![]() ![]() |

Here are some breakfast bread sticks. They're perfect for dipping in everything from sunny side up eggs to sugar free syrup. The image is super dark and wonky. Sorry about that.

Thank you so much, nita! I have worked really hard to take decent pictures, but it's taken some practice. It's so important for me to show how delicious healthy, low carb cooking can be and make it especially pleasing to families with kids, since they're often the ones we're trying to convince.

Is all these still induction friendly? I am seeing several things that I don't think are so just wanted to check. When posting it would be great if everyone would include induction friendly for us who are still not sure.

Hi, tskb! I post induction porn to the induction forum's Induction Porn thread. This is more general low carb porn allowable on Atkins. You make a good point, though. While recipes on my site are marked as induction friendly, it didn't occur to me to label these. For my recipes, all of the induction friendly ones on this page are the pizza, the crock pot pizza, the egg salad, the egg with hollandaise, and the ham breakfast sticks.
