Have you tried lowering the cooking time? Crumbling is a sign of overcooking. Also, I've read where some people have better luck cooking them on a lower temperature for slightly longer, too. Maybe split a batch and try both ways.

Crumbling is definite lack of moisture. I cook for 300 degrees for 30 minutes. Maybe, if yours are still too dry, you could try cooking slightly less time.

You could definitely use a muffin top pan, or those mini Wilton cake pans that are non-stick and sold in sets and are super cute and useful. The best things about those pans is even if you're having a bad batter day, they're still going to look amazing when you're done.

Just stay away from the maltitol fudge sauce in the stores and make your own with my chocolate sauce recipe (or one sans maltitol). Trust me on this.

You mean like subbing for the lindt? or just the dutch process cocoa? IF you mean cocoa powder only, then yes, you can use what you always/normally use. BUT NO if if you mean by replacing the lindt chocolate as well. HTH!

Crazy my poor attempt at quick is cream cheese, a little Ideal sweetner and a splash of vanilla for the bottom layer, a snack pack of SF pudding and whip cream on top. OK..I'm going to make on in a martini glass!!! NOW...LOL

Candice, I am making your chocolate brownies as I type (they are in the oven). The batter was thick after I mixed all ingredients together. I used 90% Lindt since that's the one I like the best (it has a slightly different -to me better - flavor than the 85%) and I used 1 Cup of Truvia. I will post my impressions tomorrow.
