Speaking of Coconut... I baked up a Coconut Cake earlier: ![]() ![]() Cut it into small squares, bagged them and froze most of them, except for some that I will be eating w/my Brekkers the next few days. |

The BLT "Potato" Salad is from Linda Sue's site. It even tastes great without the tomatoes if you need to reduce the carbs some. The mustard that I used was salty, so next time I would reduce the added salt in the recipe.

COCONUT CAKE
2 eggs 1/2 heavy cream 2 c SF shredded coconut 1/2 c vanilla flavor whey protein power 1 tsp vanilla 1/2 c vanilla Davinci's Bake in a greased dish for 30 mins at 350. Yummy! _________________ I whisked the eggs & cream first, then added the other ingredients. I didn't have vanilla whey, so I used chocolate. I cut the cake into small squares. Cake doesn't rise very much...actually more like coconut bars than cake. Really good w/coffee/tea in the morn or whenever. |

ok this was dinner tonight and it was really easy to make
![]() I sauteed shrimp in butter and garlic, some fresh basil parsley and rosemary from my garden..then added about 1/2 cup of cream and a scoop of cream cheese. Spices I added were curry, Indian Masala, Cayenne, Paprika let simmer a bit and then I added about 1/2 cup of diced tomatoes..continue to simmer til thickened and then served over Cauli rice..I will def make again and use chicken or scallops..was so tasty. I was jonesing for something sweet tonight so DH surprised me with my own low carb gelato - this was amazing, (even though it was starting to melt)!!!
![]() We shared this serving. Unsweetened almond milk Ideal sweetener hwc cocoa powder. DH claims he couldn't taste the almond in it, but to me it was just like toasted almond fudge without the crunch (which we could obviously add with almond pieces). I am so excited to use the gelato maker with almond milk and coconut milk as the main base with hwc to make it creamier. Keeps the carb count so low! I wanted to post this on the induction thread but I couldn't remember if cocoa powder was allowed then, so here it is instead. |

Unsweetened cocoa is a spice, but obviously you still don't want to powder the cleavages with it like glitter before you go out clubbing. Don't ask me how I know this. I will deny everything.

I just don't have time really atm for my own stuff.. I am working for someone else right now. We do things from baking for farmers markets to wedding cake. I like it.. but going to suck when I have to go on mat leave. I am going to really miss working there. |
