![]() I doubled this recipe and it baked 22 cookies. I freeze 4/ziplock w/wax paper to separate. Just take out of the freezer and no need to wait to eat. They are ready to eat from the freezer! PEANUT BUTTER COOKIES 1 cup of peanut butter (I use fresh made PB) 1 cup of Splenda 1 egg 1 teaspoon of vanilla Roll into walnut size Place on parchment paper on cookie sheet Make crisscross fork marks on cookie (dip fork in splenda so it won't stick) Bake in 350 oven for 11 minutes or so or more depending on the size of your walnut. ![]() Sprinkle a little Splenda on top of each one

Molten chocolate 1MM with strawberries and whipped cream. I limit these to about one a month, and I usually don't do the strawberries but I was in the mood for them tonight. According to my numbers this is 12.7 net carbs. Too bad you can't see the molten chocolate in this picture. Molten chocolate 1MM recipe here.

My daughter walked in when I posted that picture, and she said, "Mom, you need to make that again." It's a huge cheesecake, and I always have to freeze most of it. I need to send half to you and keep it out of my freezer.

JONIKA'S CREAM CHEESE/COCONUT WAFFLES with Truvia
Hi there
I am tired of making muffins or pan cakes and last night, I was thinking of making something else ---> at the same time, I wanted my new recipe to "follow" the original cream cheese recipe. I came up with these waffles. The taste is VERY GOOD; the consistency is perfect. JONIKA'S CREAM CHEESE/COCONUT WAFFLES with Truvia 4 oz cream cheese softened [ ˝ a package] (I use the “1/3 less fat cream cheese” to watch my calorie intake. This one is just like a full-fat one – no strange ingredients like corn starch or whey) 2 whole eggs 2 TBS Truvia 1 tsp vanilla extract 1/3 C toasted shredded coconut (simply toast it in a dry non-stick pan until light brown) 1/3 C coconut flour ˝ tsp cream of tartar ˝ tsp baking soda dash of salt 1/3 – ˝ C table cream - The batter may get too thick (coconut flour absorbs moisture). Optional: lemon extract OR 1 TBS freshly squeezed lemon juice (about ˝ TBS) OR 1/2 TBS lemon zest Whip eggs with cream cheese, vanilla extract, and Truvia. Add toasted shredded coconut, coconut flour, cream of tartar, salt and baking soda. Add table cream. Heat up the waffle maker. Don’t forget to apply a non-stick spray. It takes about 5 minutes to bake one waffle thoroughly. Bon Appetite! It makes 4-5 waffles. The amount of waffles depends on how much batter you use to make one waffle. I used 2 regular large spoonfuls for 1 waffle. I didn't do the exact net carb count, however, my rough estimate is: 4 net carbs/waffle (if someone does the math to figure out the exact net carb number, please post it here) ![]() ![]() |
