Where are you gals finding the peanut flour? Near the specialty organic flours and such along with the flaxseed? Or in the regular baking aisle?

The bummer thing with Atkins is that peanut flour isn't allowed until the legume rung and coconut flour not until the pome fruit rung (think peaches, another pome fruit). It's definitely the reason so many stick with the almond and other nut flours, which are allowed much earlier in the OWL rungs.

The biscuits look amazing. I have a question about coconut flour maybe Candiflip or someone else who has used coconut flour can answer. Does the coconut flour taste like coconut? Are all the spices added to the biscuits to mask the coconut taste? How would they taste without the spices?

It does taste like coconut flour. If you love coconut, it's not a problem. Almond flour makes some terrific biscuits, too! Try different variations and see which is the best for your needs.

Wohooo! They taste like Heaven! I used Stevia extract and Erythritol for sweeteners and 3TBS of HWC with 3 TBS chocolate almond milk (unsweetened). Made them last night. |
