It is VERY creamy it feels like between a mousse and silky cheesecake it's very good. I think the important thing is to not overbake. I bake my mini cheesecakes for 12-15 minutes and they come out like that extra creamy.

How do you get them from not sinking in the middle. Do you do a waterbath?

I use a waterbath (my 8x8 pyrex dish in the bottom of the oven) and it helps, but what seemed to help even more was adding a couple spoonfuls of greek yogurt to the cheesecake mixture. I'm making some of these today. I've been adding cocoa powder and cinnamon to them for a change.

Hi Starry Night!

I didnt use a water bath. I just bake them for 12-15 minutes and dont open the door until you're ready to take them out. You can also let them cool in the oven so they don't sink or crack.

Thanks, I guess I have to experiment with them. I didn't do a crust not sure if that is a problem, too.

LOL! I acutally had to start ordering online myself. The store I used to buy from went out of business..and could not find anywhere else local. I was bummed to say the least.. and that is why no blog posts.. updates.. pics.. for so long!
Got my flour in today and started baking

One more and last for a while..
I've been experimenting with different sweeteners.. OMG these cookies are my fav EVER! So good really.
