Here is the recipe:

1 1/2 bags of frozen cauliflower or One large head of fresh cauliflower
1/2 small onion
1 T. of celery seed
2 bay leafs
salt and pepper to taste
1 T. of your favorite sweetener
32 ounces of chicken stock
16 ounces of water
1/4 cup of heavy cream
1/4 cup of half and half
2 T. of oil (i use rice oil but any oil will be ok)
2 T. of butter
1/2 tsp. of xanthum gum (if necessary)



Heat oil in a five quart stock pot and add onion. Saute until onions are translucent. But not burnt. Add chicken stock,water, celery seed and bay leaves. Bring to a boil and lower to medium heat. Add cauliflower and cook until until tender. When cauliflower is tender remove roughly 3/4 of cauliflower and some liquid and put in blender. Blend well like baby food. Add blended cauliflower back to pot and stir. Add salt and pepper and sweetener. Simmer for about 10 more minutes. Keep soup at a simmer add half and
in a thin stream and stir. Then add heavy cream in the same manner. Be careful not to let pot boil as cream will curdle and turn into something unpleasant. Simmer 5 minutes then add butter constantly stirring until butter has blended in the soup. . Continue to simmer for 30 min. Constantly stirring.At this point if soup has not reached desired thickness add 1/2 teaspoon of xanthan gum. If you do not have any then add more heavy cream tablespoon at a time until you reach desired thickness. Allow it to cook down it will thicken.
Makes 5 servings.

Roughly 5 net carbs per serving
Always double check my carb count. But I think this is about right.

Thank you! They do stick a little to the paper just like a normal cupcake would I guess. It's ok cuz that way they're portable with no mess!

If the cheesecakes stick, use foil wrappers, as I did here for our cheesecake bar:



They come out super beautifully:



The added bonus of the foil is that they're so sturdy, you don't need the cupcake pans to cook them. I just place the foil liners in a jelly roll pan, fill and they cook up nicely! (I remove the paper inserts and just use the foil)

I had a great reader run these carb counts for me (YAY!) And each brownie bite has between 1 and 1.25 NET carbs. That's pretty good i'd say even if you eat a few. (Like I did )

That was amazing! I just used store bought pesto because I didn't have the time or money to buy the extra ingredients! We even did the asparagus that way too!

I used riced cauliflower in this chipotle burrito bowl I made tonight. :



It's a bed of lettuce topped with riced cauliflower, topped with spicy chicken thigh, topped with caramelized onions and green peppers, topped with guacamole and sour cream, cheese and salsa. And sprinkled with magic unicorn dust.
