Hi, I am with dollkey, I can never get my oopsie rolls close to that. I let the egg whites come to room temp., I have played music for them, talked to them and nothing. I guess it is all in the incorporating the whites with the yolks, or vice versa. I have given up as well. Teresa

Don't give up! It's worth the continued effort. Do you have a stand mixer? If so, you can use that to whip the snot out of the whites. You just want those stiff peaks to form.

Thanks for posting that video link. I just watched it and I'm ready to give this a shot again. I may even do it tonight.
I tried the Floopsies and they are good, but...I have always had secret Oopsie envy that I couldn't do them. If you are struggling...take the 13 minutes to watch that video....it's not nearly as scary after seeing someone else do it start to finish! |

I've made several batches and now swear by the addition of a couple pinches of xanthan gum to the whites sprinkled in just as they start to get frothy. Mine have never failed yet with this little extra ingredient. Maybe it allows for a wider margin of error? (Or maybe I've just been lucky and now have jinxed myself.)

I think xanthan's not a bad idea at all, sweet! I've tossed in some ThickenThin from time to time when I didn't want any face palm from the rolls. I do think it helps a little bit.

The crust is walnut/macadamia/almond
To make the blackberry topping, I used my strawberry sauce recipe, tossed in an extra half cup of xylitol and a splash of lemon juice. (I made the recipe to taste since the blackberries were more tart than I wanted). It was amazing! |
