One minute muffins ROCK!

OMG, I was very skeptical about these....but....I made one this morning and I am sold! I even forgot the cinnamon and still loved it! I used one packet of Stevia in place of the splenda. I love these and can think of many GREAT variations that will rock!
For those of you who have never heard of these here is the directions;
1/4 cup Ground flaxseed meal
1/2 tbs baking powder
1 egg
1 packet sugar replacement of your choice
1 tbs Cinnamon
1 to 2 TBS of unsalted REAL butter

Mix dry ingredients in a large coffee cup then mix in egg and butter.
Microwave 50 to 60 seconds.
It pours perfectly out of the mug and is very bread/muffin like. Yummy!

Possible variations;
Nutmeg
Blueberries
Any berries
Sugar free jam/jelly
Cheese
You tell me!

i LOVE them too. I just tried it for the first time last night... YUM!!

I left out the cinnamon & it was amazing... i will be making them again very soon

I like them too. In fact I was just sitting here thinking maybe I'll have one soon, if I feel peckish before bed.

I can tell you nutmeg is indeed an excellent variation. I've made it cheesy too, with very finely grated cheese.

Also try it plain, with no spice or sweetner, do it in a flattish container, and slice. It can be toasted like that, or coated in beaten egg and made French toast style.

I'm just getting into them too!! This morning I made one with maple extract and ginger.
It was awesome. The other day, I made it with raspberry and almond extract! The possibilities are endless! Keeps me SO full for so long!

You're right the smaller....1/2 teaspoon. I wonder what would happen if you put in more? I hope you enjoy!

It will run over in the microwave and then adhere to the bottom of the cup leaving the cup about 3/4 full, and an equal amount baked to the bottom of the cup - and it tastes pretty salty.

At least that's what happened to me!

I can't really get hold of flaxseed meal (not for any kind of non-silly price anyway) so I use almond flour for mine. 25grams, or about an oz.

Junkfoodmonkey, You can buy whole flax seeds and grind them in a clean coffee grinder. Freshly ground flax seed is the best it's really nutty and healthier than ...well...most things!

Hi FarrahStar...
Well, if I ever need a recipe where half of the muffin is stuck to the outside of the cooking container, I know how to do it! (I'm smiling)

Thankfully, it had cooked thoroughly and it all stuck to the outside of the cup and didn't leave any mess in the microwave. Pretty interesting looking muffin...but not quite Ooopsie worthy.

I am a huge fan of these. Thanks to whoever invented them. I read in another thread that you can skip the baking powder altogether... so I tried it and it worked.

I must be doing something wrong. These taste terrible. I think it's the flax. I've tried adding more splenda, vanilla and almond extract, slathering them with butter, but nothing works. How would these taste if I used low carb bake mix instead of the flax?

Seriously, these are so heavy and taste so bad that I literally have to choke down each bite. I really want to like them, but I just can't...

Maybe try the almond meal? I don't think these are for everyone and honestly I think the longer we go without bread the more flexible we are. You could try grinding your flax more so that it's smoother? Good luck....maybe these are not for you. Low carb on!

Totally loving the one minute muffin in a mug. I've tried a few variations myself, but I have to say the one that went over best was when I substituted the cinnamon and splenda with a bit of salt and some poultry seasoning. I cut the muffin up into little squares, served it with turkey breast and a little gravy--ta daaaa! STUFFING!

I do mine with the almond meal, since flax is a hassle for me to get. Almond meal is actually cheaper! They still taste "heavy", but are tasty and keep me very full. It's always worth trying something different, so Angelkc22 try the bake mix. If it works, great, if it doesn't, no big deal.

I had a real treat one of these the other night, before I went back to Induction level and legal for a while (so no Almond meal allowed). Instead of spices I grated a small square of Lindt 99% cocoa choc and used splenda and butter (sometimes I use olive oil instead of butter making them.) And I topped the thing with whipped cream and ate it like a sponge pudding dessert. Mmmm... No more of those for a while!

I never thought to do stuffing! Yum! I love OMM! My fave is making this into garlic 'bread'. I omit the sweetener and cinnamon and add Italian spices. Cook and cut into slices and then spread garlic butter and toast in the oven. I've doubled the recipe and cooked it in a bread pan to make four 'bread' slices (got the idea here from another poster). This way I can save two slices for my next meal or for the next day.

I have been making great sandwich bread by omitting the butter, splenda and cinnamon and adding Italian seasoning, 1 Tbs olive oil and about 1-1/2 Tbs grated parmesan cheese. I cook it in a square tupperware then slice it and it makes perfect sandwiches. Nummmmm.
