What am I doing wrong?

I started back on low carb 2 weeks ago - the first week I lost 4 pounds, this week I gained 1 pound, eating the same things.
For breakfast I eat Linda's Mexican quiche
For lunch I eat Linda's Deep Dish Pizza or other quiche or Boars Head salame and cheese
For dinner I eat meat and vegetable
For evening snack I eat Pork rinds drizzled with butter and sprinkled with Splenda/cinnamon.
Sometimes I have a small spoon of natural peanut butter, sometimes I have cheese for a snack to keep symptoms of hypoglycemia away.
Is it obvious that I am making some mistakes?

A few things come to mind.... Maybe its the salty salami thats making you keep on water weight? Are you drinking a lot of water daily?

You might also want to ditch the peanut butter until a little later on... and one last thing, i dont know the ingredients that are in the "Lindas Recipes" but if there is a lot of cheeses, that might cause a stall.

Oh, and make sure to eat more vegetables...

I just finished my first month back on low carb. For two and one-half weeks of that, I bloated up like a prize turkey with water weight gain from PMS and TOM, barely able to maintain what I had lost. This week it's whooshing right off (well, out! ) of me.

Some weeks are just like that.

You may be right in your comments in several ways. I will stay away from the salame and peanut butter for a while and see what happens. Yes, there is a lot of cheese in the recipes I use, and after reading another person's stall and eventually discovering the problem was cheese, it made me wonder if that is my problem. I will make adjustments and hope that will fix the problem. I drink about 80 - 100 ounces of water a day and I do eat a lot of veggies.

12-15 of your 20 carbs for the day should be coming from veggies & salad.
