Snack - Jalapeno poppers
Meal - Surf and turf (lobster & ribeye are my faves)..although lately I've been smitten with chicken Caesar salad, add bacon and kalamata olives. I could eat one daily. |

Greek cucumber salad...yummo
Take a cucumber peel and slice, two roma tomatoes chopped, a little chopped onion, slice some green olives, add some feta cheese, and greek salad dressing. Marinate overnight....its delicious, tangy, and fresh. ![]() |

Oh that reminds me I have not made this in a while. I've been full on grilling with the recent nice weather....

Mmmmm, toss up between (a) grilled tuna and broccoli w/ lots of butter and parm cheese; (b) hot wings and a salad w/ blue cheese dressing; and (c) garlicky shrimp on a bed of spinach sauteed in olive oil and garlic -- I could rotate these 3 meals daily and be quite happy!!!

I'm partial to a cold stick of salted butter wrapped in crispy bacon....

![]() However, I did have a fantabulously delicious tuna with mayo with swiss cheese on oopsies for lunch. Dinner will likely be a nice salad with some bacon, chicken, ranch dressing and just a little sprinkle of cheese... |

not much of a difference, some people make them with cream cheese, other with cottage cheese, some use splenda, other do not, I think we all make the version that works for us. Mine have butter and garlic salt in them, no cheese at all. Cream cheese or splenda cause me to have carb and sugar cravings.

Shrimp and egg salad with SF mayo, celery and a little bit of red onion and on a bed of mixed baby greens and romaine with a wedge of fresh, garden tomato; Big fat juicy organic beef 1/4 to 1/2 pound burger, topped with a bit of onion sauteed in butter, some fresh mushrooms and smothered with a couple slices of some good baby swiss (can also do this one with a plump chicken breast too!) Ummm... big, fat juicy ribeye on the grill, topped with butter Roasted "sticky chicky" rotissere styled chicken; LC cheesecake Berighteous - the original egg white roll was called the Revolution Roll by Dr. Atkins when he introduced the "Atkins Diet Revolution" and was made with 3 tablespoons of cottage cheese. The "Oopsie" was born from an accident where the person was substituting cream cheese in place of the cottage cheese and accidentally added 3 ounces of cream cheese instead of three tablespoons. I make them sometimes substituting 3 tablespoons of mayo and sometimes adding some butter like Suzanne. Some people use ricotta too in place of the cottage cheese.

Mmmm I just told my Dh last night, as I was munching on some delicious hot wings he made that I would stay with him forever as long as he keepsthe hot wings coming!
He grills them first, then does a hot sauce (Franks here too!) and butter sauce. To DIE for. MMMM |

Definitely my gluten-free (oopsie) rolls (and offshoot recipes), waffles, crepes, low-carb (obviously) cake, lasagna, pizza, enchiladas, anything Italian, Mexican or Chinese!
The difference between the original Rev Rolls and the oopsies are that mine were a goof. but they are so much more supple and versatile, and have been the base to many other recipes that very clever folks have come up with. |

Hmm I think it depends on my mood really. Wings are good. As long as they are cooked nice and crispy and near burnt LOL. Cheeseburgers on the grill are awesome too. Sometimes I just want some bacon and eggs.

my favorite lately has been shredded chicken with mild green enchilada sauce, green onions, and monterrey jack cheese and baked until its all gooey....just like a burrito filling and very comforting to me!
