Atkins-friendly Okra recipes?
Hi guys,
I tried okra for the first time tonight and it was pretty good -- but I think it needs some spicing up, etc. to make it more interesting. Do any of you have any induction-friendly recipes for okra? |

I put cut okra in my homemade beef vegetable soup. Love pickled okra. Very good stuff.

I make smoothered okra with canned tomatoes, diced onions peppers and frozen okra ( you can use fresh if you want.
coat the pan in your favorite sauteeing oil ( mine is EEOV) and saute the onions till clear add the chopped peppers and the okra and continue to cook till the onions brown a bit ( okra will get slimey bit don't worry tomato acid will fix that) add one can sugar free tomatoes either whole or diced. add 1 cup chicken stock or water bring to a boil and cook till veggies are tender about 20 min. I like mine hot so I use hot peppers but if you don't like spicey hot you can use bell peppers and add some thyme and a bay leaf while it cooks. then you can spice it up if you want with some chili peppers, hot sausages and/or shrimp or chicken and call it a meal.
