Could you tell me why polydextrose would be called a fiber, on a food ingredient list? What is it exactly?

A carbohydrate used as a bulking agent, replacing sugar, starch, and fat in cakes, candies, dessert mixes, gelatins, frozen desserts, puddings and salad dressings

Has 1 kcal/gram

Derived from dextrose or glucose polymers arranged in such a way that the end result behaves like a fiber and so contributes a significant source of fiber
